Everyone’s Favorite Spring Mix Salad Recipe
This spring mix salad recipe is probably one of my favorite salads and I have a lot of them My Everyday Chopped Salad Recipe, Mediterranean Turkey Salad, and Easy BBQ Chicken Salad, to name a few.
This is This I serve salads whenever we have guests over and I want a salad to impress me! It’s filled with crisp lettuce, topped with beautiful fresh tomatoes, creamy avocado, onions (marinated in a delicious dressing), has a wonderful crunch on top, and an exciting homemade dressing. this is a great salad!

Spring Mix Salad Mix: Spring mixed salad mixes typically consist of red leaves, greens, and greens like arugula.it’s truly everyone’s favorite and Leafy Farm Make the killer mix!
Heirloom Tomatoes: You can absolutely use any tomatoes here. I love the bright colors of local heirloom tomatoes, but anyone can. Use what you get!
avocado: Ripe avocados add the perfect creaminess to this salad!
shallots: Crisp and crisp, these are the quick marinades in our quick and easy condiments that are the stars of the show in my opinion!
Fresh Parmesan: You can omit it for dairy-free and vegan options, but it really makes this salad pop.
Gluten-Free Panko: This crunch is everything. We bake them for extra flavor and it only takes a minute or two! Don’t want to use panko? Grind pecans into breadcrumbs Consistency and toast them! This will be your paleo-friendly option!
dressing: A mixture of olive oil, lemon juice, garlic, salt, pepper and oregano. It’s easy, and the grated garlic adds the perfect bite.

- Other Nuts of Choice (toasted or not): sliced almonds, sliced almonds, pecans, walnuts, you name it!
add cheese: While I’m using grated Parmesan here, a variety of cheeses work well as a savory ingredient in this spring salad mix. Leave the cheese out so the salad is vegan and dairy free.

Speaking of this dressing again, because I kill two birds with one stone here. I do the dressing and pickled onions at the same time!
- I cut the onions into thin rings and put them in the bottom of a glass jar (or bowl).
- Pour in oil, lemon, garlic and spices.
- Mix it up and set it aside while you prepare the rest of the salad!
How to make the perfect salad
- Add salt to your vegetables.
- Make your dressing/pickled onions.
- Toast the breadcrumbs of your choice (see notes above for paleo options).
- Assemble your salad.
- Toss with remaining dressing.
- Serve immediately!

The key to restaurant salads…salt your veggies! Most restaurants add salt and pepper to vegetables, not just condiments, so you should!

Any good salad has to start with the freshest lettuce, which I have enjoyed and purchased from Little Leaf Farms for some time. How do I scale this spring mix salad for 2 people?
You’ll notice this is a salad for 4 to 6 people. That’s because it truly is the most delightful dinner party salad ever. But you can definitely narrow it down to two. Just use a box of spring salad mix and top with the desired number of toppings and dressings.

To prepare salad ahead of time for meal preparation:
You can totally prep the ingredients for this salad ahead of time, even the day before! Just make sure everything is ready and get dressed before serving.
Prepare in advance:
dressing! You can make this a day or two in advance and store in the refrigerator or even on the counter, as long as the onions are completely covered. Pack the salad just before serving.

Slice everything and bake panko! You’ll wait to assemble and dress your lettuce until serving.
If you like this protein-packed salad like chicken, go ahead and prepare this salad by using a separate container for the salad ingredients and another for the chicken so the meat heats up on its own. Of course, with most salads, you’ll want to keep the seasoning separate and add it just before serving.
With all this in mind, this salad can be kept in an airtight container and in the refrigerator for 3-5 people.

- 1/2 red onion, thinly sliced

- 1/4 teaspoon fine sea salt
- 1/4 teaspoon Black pepper
- 1 avocado, sliced
- 2 large heirloom tomatoes, sliced
- 1/3 cup Freshly grated Parmesan cheese, more as desired
- 1/3 cup Gluten-free panko breadcrumbs or grated pecans, toasted
dressing:
- 1/3 cup Extra virgin olive oil
- 2 tablespoons lemon juice
- 1/2 garlic cloves, grated
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon Black pepper
- 1/4 teaspoon dried oregano
- Make Pickled Onions and Salad Dressing: Cut the onion into thin rings and place in the bottom of a glass jar (or container or bowl). Pour in oil, lemon, garlic and spices. Give them a toss, cover and set aside until ready to assemble.
- Toast Crumbs: Heat a small saucepan over medium heat and add panko. Bake for 2-3 minutes until golden brown, stirring frequently to avoid burning.

- Arrange the avocado and tomato on the lettuce.
- Add the pickled onions with a fork, leaving the vinaigrette to season the salad.
