- coconut oil – Always measure oil solids before melting them. You can also use unsalted butter or ghee.
- unsweetened almond milk – To make this recipe dairy-free, I use Homemade Almond Milkbut you can use store bought or any other keto milk You prefer.
- vanilla bean – I highly recommend using fresh herbs – I sometimes have them in my Almond Flour Pancakes And it tastes over the top! Vanilla hummus would work too, just make sure it’s unsweetened.If you don’t have these, you can use 1/2 tsp vanilla extract instead. This will reduce the vanilla flavor compared to using the beans directly, but adding more extract will cause the alcohol in the extract to have an aftertaste.
- Wholesome Yum Flour – you will need both Wholesome Yum Almond Flour and Wholesome Yum Coconut Flour for this recipe. These flours are mixed together to improve the texture. If you are allergic to either, you can use only 6 tablespoons of almond flour in total or 2 tablespoons of coconut flour in total, but the texture is much better when combined.
- Besti Monk Fruit Allulose Blend – Makes the cake soft and moist while tasting like sugar.If you need a different sugar substituteuse my synthesis Sweetener Conversion Table Use the right amount, but keep in mind that most other options will be drier. If you want a paleo cupcake, coconut sugar is a great substitute.

- Melt coconut oil. heat coconut oil microwave safe cupsmall bowl, or ramekins in the microwave.
- Add wet ingredients. Stir in almond milk and scraped vanilla bean seeds.
- Add dry ingredients and eggs. Add almond flour, coconut flour, Besti, baking powder, sea salt and eggs. Stir batter until well combined. Smooth the top with the back of a spoon.
