The only ingredients you really need to make cheese slices are… cheese! The most common types of cheese are cheddar and parmesan, but this cheese crisp recipe works with virtually all hard or semi-hard cheeses:
- parmesan cheese – Low carb parmesan chips are lighter and definitely have the crunchest texture. They’re probably the easiest cheese to make low-carb cheese slices because they’re basically always crunchy. Even without adding any extra salt, Parmesan cheese is saltier than those made with many other cheeses.
- cheddar cheese – Cheddar slices are more challenging because you have to get your timing right. They’ll be soft and pliable (not crispy) if you undercook them, but burn easily if you overcook them.It’s a little difficult to crisp cheddar without burning it, but it Yes feasible.
- cheese – Mozzarella is similar to cheddar, but not as crisp because mozzarella contains more water. If you choose to use this cheese, make sure it’s a low-moisture, part-skim mozzarella, not a fresh variety, which has a higher water content and doesn’t become brittle.

- Plain Parmesan Chips – If you like Parmesan, you’ll love this easy version. You can also add any of the seasonings listed below.
- regular cheddar cheese slices – You can also make plain cheddar slices. Be sure to watch them carefully while cooking, as they burn from done to hastily.
- Italian – This is the version on the recipe card below!It includes a mixture of cheddar and parmesan cheese, plus Italian seasoning.
- all seasonings – Use mozzarella or parmesan and sprinkle with bagel seasoning.
- Cool Ranch – sprinkle with heaps of cheese (I like parmesan or cheddar) Powdered Ranch Seasoning.
- salt and vinegar – Use Parmesan cheese and season with salt and vinegar.
- Sour Cream Onions – Use mozzarella or parmesan cheese and sprinkle with sour cream and onion popcorn seasoning.
- spicy jalapeno – Use pepper jack for spiciness or cheddar for mild heat. Cheese pile on top with a thin slice of jalapeno.
- Chili Lime – Use cheddar and sprinkle with paprika and lime zest.
- Mexican – Use the Mexican cheese mixture to make cheese chips, then swap the Italian seasoning for Taco Seasoning.


How to Make Cheese Crisps at Home
This section shows how to make Parmesan chips, cheddar or any other type of cheese! Their process is the same. See the recipe card below for full instructions.
- Prepare. Preheat oven and line a large baking sheet with parchment paper. (Silicone pads also work.)
- Mixed cheese. If you’re using multiple cheeses, whisk them together in a small bowl.
- form piles. Place tablespoon-sized heaps of shredded cheese (think 2-inch circles) on a parchment-lined baking sheet and sprinkle with seasonings of your choice.


- bake. Place the cheese chips in the oven until the edges start to brown. Watch carefully as they burn quickly from finish to finish.
- cool. Let the chips cool in the pan until they are no longer sticky, then transfer to a paper towel or cooling rack to crisp up with a thin spatula.

How to make cheese slices crispy?
The key to crispy grilled cheese chips is:
- pile size – Keep your cheese piles fairly small and don’t layer them too thickly. You want the cheese to be baked in a very thin layer as it bakes in the oven, which will make it crispy.
- spacing – Make sure to leave enough space between the piles for them to spread out or you’ll end up with a slice of cheese! This is still perfectly edible, but individual chips are better for most uses. Also, the edges are the crispest, so it’s best to have individual chips so you have more edges.
- oven time – The time in the oven will vary depending on your specific oven and more importantly the size and thickness of your cheese pile. If you don’t bake long enough, your chips will be al dente rather than crunchy (this is not a problem with parmesan chips, which can easily become crunchy, more so with other cheeses).
- Browning – Done when the Parmesan cheddar slices are slightly browned on the edges. This is a completion metric to watch out for.
- keep an eye – They will go from “yet” to burning fast! Chips made with semi-hard cheeses, such as cheddar chips, can easily become too soft if taken out too soon, but can burn if left too long. Parmesan chips are a little easier because parmesan cheese is harder than cheddar.
Storage Instructions
- Shop: Store low-carb cheese chips in an airtight container in the refrigerator for up to a week.
- freeze: You can also freeze them in an airtight container for up to 6 months.
- Crisp again if desired: If your chips lose their crispiness, you can bake them again until the cheese is melted, then remove from the oven and let them cool until crisp.

What to Serve with Cheddar and Parmesan Crisps
There are many ways to use grilled cheese slices. You can use them to do pretty much anything you would do with a “regular” chip:
