Design and Features

The Vosteed Morgan Chef’s Knife was designed by Yue Dong, known for his EDC knives.According to Dong Zai His interview with Knife News, the challenge with creating kitchen knives is that they require “more engineering than design”; in other words, they are tool first, art second, as opposed to most EDC knives. Taking on the challenge, Dong successfully incorporated a great deal of design into the engineering of Morgan Knives. He took the standard silhouette of a Western chef’s knife and infused it with the geometry of an Eastern chef’s knife.

Gently curved blade with pronounced Harmon Line, giving it a distinct katana vibe. By the way, Vosted confirmed that this is a natural diamond thread, not man-made, which is pretty cool. They noticed that the knife was three-layer laminated, made of three-layer steel, and its core layer was 9Cr18MoV. This is a high-end stainless steel alloy containing 0.9% carbon and 18% chromium and is known for its strong edge retention, hardness and corrosion resistance.this Rockwell hardness It’s 58 to 60, which is fairly typical for a good kitchen knife; it’s hard enough to retain its sharp edge, but not so hard that it becomes brittle.

The tip of Vosteed Morgan Chef’s Knife is in a style known as a k-tip; it comes from the Japanese word kiritsuke, which means to cut. This style of knife tip is used in Japanese dishes for slicing vegetables or sashimi and adds a strong oriental look to the knife.

The Vosteed logo is etched on one side of the knife, while the Dong logo is etched on the other side.

The black handle is Made of G10, a “thermoset plastic laminate” commonly used in knife and gun handles and (interestingly) for circuit boards. G10 material covers the full shank design with a unique notch on the rear. The result is a chef’s knife that is both functional (in a European way) and beautiful (in a Japanese way). It definitely has more style than most kitchen knives in the sub-$100 category.

The Vosteed Morgan Chef’s Knife comes in a nice, sturdy box with custom foam inserts that are well protected. Other than removing excess plastic and washing it once before use, the knife has no real setup or setup.

Performance

A chef’s knife is designed for a rhythmic rocking motion, so it requires a curved blade that balances with the handle. On the Morgan, the handle is slightly heavier than the blade, but I still found it balanced.

Chef’s knives range in length from 6 inches to 10 inches, with 8 inches being the most popular size. The blades are intentionally large, allowing the chef to complete more slices for each action. The goal is to have the knife very comfortable in the hand, allowing for a smooth and efficient rhythm.

Of course, the ultimate test of the Vosteed Morgan chef’s knife is how well it works in the kitchen. I made the 1080p video below while preparing dinner one night. One caveat: I’m not a professional cook; at best, I work as a part-time cook at home. I’m unlikely to use this knife perfectly, so this video just shows how it worked for me.

Now that I have prepared dinner with a knife many times, what do I think? I absolutely love this knife. It’s sharp and cuts through meat and vegetables with no problem. The handle is very grippy, even when wet, and is easier to hold than the Ikea metal handle knives we have. The knife is well-balanced and easy to use rhythmically. Functionally, Vosted’s Morgan is everything I want in a chef’s knife.

Styling, on the other hand, is more of a personal choice. If you appreciate the Asian influence on your decor, you might like the look of this knife.Personally, as a person who just got custom katana swordI’m all for the Japanese design Yue Dong brought into the kitchen.

My wife has also used the Vosteed Morgan Chef’s Knife many times and she really likes how sharp it is. For her, it’s great for big jobs like cutting a ham or cutting a watermelon. However, she is a bit short (5’4″) and she often wishes she had a 6″ version of this knife, especially for smaller tasks like slicing celery and chopping onions, as an 8″ blade feels right to her A bit too big. Maybe Vosteed will make that scale in the future.
