For stir fry:
- Avocado Oil – For frying. Olive oil also works great.
- chicken breast – Use boneless skinless chicken breasts.I like this brand, which is organic and delivered to my door, but any kind will do. You can also use boneless skinless chicken thighs if you prefer. Cut the chicken into bite-sized pieces.
- sea salt & Black pepper
- onion – I used white onions, but you can also use yellow or red onions.
- red bell pepper – Red bell peppers are great for coloring, but you can also use orange or yellow bell peppers.
- snow peas – I love snow peas, but if you can’t find snow peas, you can also use peas. They may take longer to cook.
- almond – these require slicing, you can make your own, but I recommend buying pre-sliced like this For convenience. Almond flakes can also be used.
- green onion – Look for bright green onions that don’t have any browning.
Sauce:
- chicken soup – I prefer organic chicken stock, but use the type you like.You can use low sodium if you prefer bone broth If you want a stronger flavor.
- Coconut Amino Acids – This is a healthy, gluten-free soy sauce substitute. If you don’t mind gluten, you can use soy sauce.
- garlic – Use fresh garlic for best flavor or canned garlic For convenience. If you want to use garlic powder instead, use 1/4 teaspoon instead of 2 cloves in the recipe.
- ginger – Fresh ginger adds the most flavor. To substitute grated ginger, use 1/4 teaspoon grated instead of fresh teaspoon.
- Black pepper

How to Make Almond Chicken

- Fried vegetables. Heat avocado oil in a large frying pan. Sauté the onion until translucent, then add the bell pepper and sauté for a few more minutes.
- Cook the chicken. Add chicken pieces to skillet and season with salt and pepper. Cook until chicken is cooked through.


- Make stir fry sauce. In a small bowl, whisk together chicken stock, coconut aminos, garlic, ginger and black pepper. Add the mixture to the pot and simmer until the sauce has thinned and thickened.
FYI: I don’t like using any thickeners here, but you can if you want.
A classic option is to add 1-2 tablespoons of cornstarch to the sauce mixture, or you can use cornstarch substitute.
- Finish. Increase heat and add snow peas, almonds and chopped onion. Fry for a few more minutes.


- Serve. Fried almond chicken over rice or Cauliflower Fried Rice.

Variety
Feel free to try variations on the original vegetable or protein:
- vegetable – Free vegetables you can add include mushroom (cooked with onions), broccolicelery, carrots, bamboo shoots, water chestnuts.
- protein – replace the chicken with drumsticks, beefor shrimp.
- nut – Try cashews or peanuts instead of almonds.

Storage Instructions
- Shop: Store leftover stir-fry in the refrigerator for 3-4 days.
- Reheat: For best results, sauté the almond chicken on the stovetop, but you can also microwave it if desired.
