Crockpot Cranberry Sauce | Lexi’s Clean Kitchen



These easy, healthy cheesy scalloped potatoes are a classic #sidedish! This light version has just the right amount of cheesiness and is baked to perfection!

➡️Make the sauce: In a saucepan, melt the butter, then add the onions. Cook until translucent, then add more butter along with arrowroot flour and seasonings. Stir until melted, then slowly add milk. Increase heat and cook until thickened.

➡️ Potato slices: Slice the potatoes with a mandoline or sharp knife. Try to slice your potatoes evenly, about 1/8 inch thick!

➡️Add cheese and potatoes: Remove pan from heat, add cheese and stir until melted. Add potatoes and mix well, then transfer to casserole dish. Top with remaining cheese.

➡️ Bake, Garnish and Serve: Bake the potatoes until cooked, then sprinkle with herbs to serve.
