What is peanut butter?
Nutella (aka gianduja) is a smooth, soft chocolate-hazelnut spread made with hazelnuts and cocoa powder. It originated in Italy but is now loved all over the world. This versatile spread can be used on toast, waffles, and pancakes; as a dip for fruit and cookies; or as a filling for pastries.
The problem is, store-bought Nutella has a lot of sugar (20 grams per serving, to be exact). That’s why we need sugar-free peanut butter options. I first made it with erythritol a few years ago, but it was hard and runny. Now I found a solution…

- hazelnut – You may also find these nuts labeled Filbert on the packaging.Look for unsalted raw hazelnuts for this recipe, or save time by buying blanched hazelnutsthe skin has been removed.
- Besti Powdered Monk Fruit Allulose Blend – Make this homemade Nutella sugar-free!most other sugar substitute (Anything that contains erythritol, including most brands of monk fruit and stevia) would not work for this recipe as the erythritol will not dissolve and create a gritty texture. Concentrated liquid sweeteners can provide the right texture but tend to have an aftertaste.
- unsweetened cocoa powder – I like the taste of this best quality.
- Sugar Free Dark Chocolate Chips – While optional, they help thicken and I highly recommend adding them if you don’t want the spread to be thin.
- vanilla extract – Use the highest quality possible.
- coconut oil – The optional addition of this healthy fat helps thicken the keto hazelnut spread (since it is solid when cooled).
- sea salt – Balanced sweetness.

How to Make Sugar-Free Peanut Butter

- bake. place hazelnuts on bakeware Roast until lightly browned and fragrant.
- peel. Place toasted hazelnuts in a covered bowl and shake until peeled, or wipe inside a folded kitchen towel.


Tip: Save time by buying blanched hazelnuts!
you can Find blanched hazelnuts here. If you use these, you can skip the two steps above without having to roast them or remove any skin.
- process. Pulse Hazelnuts high power mixer or food processor, whisk until a smooth hazelnut butter forms. Scrape down the sides as needed.


- melt. In microwave or double boiler, melt chocolate chips (if using).
- smell. Add Besti powder, cocoa powder, melted chocolate (if using), melted coconut oil, and vanilla extract.


- mix. Process until the application is smooth and glossy.

Tip: Adjust the oil at the end to ensure the correct consistency.
Try mixing first without adding any oil, if it’s still too thick you can try adding more oil.
storage instructions
- shop: The shelf life of unsweetened peanut butter in an airtight glass jar is about 2 weeks. It’s also fine in the fridge, but the texture will be firmer.
- freeze: Store keto Nutella in freezer safe jars for up to 6 months. After thawing, stir well to restore its texture.

Arrange hazelnuts in a single layer on a baking sheet.bake 8-10 minutesuntil they are brown and fragrant.

put hazelnuts in Large container or bowl with a lid。 Shake vigorously to remove loose skin. Repeat the process as needed, setting aside the already peeled hazelnuts. Alternatively, rub the hazelnuts with a folded towel to remove the husks.

Put the peeled hazelnuts in high power mixer or food processor. The process is 1-3 minutesscraping down sides as needed, until nuts begin to release oil and a smooth nut butter forms.

Melt chocolate chips in a small bowl in the microwave, or in double boiler on the stove.

Add Besti Powdered, cocoa powder, melted chocolate, vanilla extract and coconut oil.additional process 1-2 minutesApply until smooth and glossy.

The unsweetened peanut butter will thicken a bit as it cools. Refrigerate for a thicker, more spreadable consistency.
