- olive oil – Use your favorite extra virgin olive oil or any neutral cooking oil. Avocado oil works too.
- onion – I used yellow onions, but white onions would work too.
- garlic – Fresh garlic tastes best, but you can use 2 teaspoons instead canned minced garlic or 1/2 tsp garlic powder For convenience.
- fresh spinach – I prefer the quiche with fresh spinach, but you can substitute frozen spinach. If using frozen spinach, you will need to thaw it first, drain any excess water, and then proceed to step 2 in the recipe. The amount needed is 20 ounces of frozen spinach, which once thawed is nearly 2 cups in volume.
- Egg – Room temperature eggs work best when baked. Leave the eggs on the counter for about 30 minutes before using, or if you forget, submerge them in warm water for a few minutes to bring them to room temperature.
- heavy cream – You’ll get the creamiest texture, but you can also use whole milk, or plain almond milk Or dairy-free canned coconut milk.
- sea salt and black pepper
- baking powder – Although optional, I recommend using baking powder for a fluffier quiche.
- cheese – I used a mix of Swiss and cheddar cheeses in this spinach quiche recipe. See below for more cheese ideas. (If you need a dairy-free option, you can substitute vegan cheese.)

How to Make Spinach Quiche

- Prepare. Preheat oven. Finely chop spinach, garlic and onion.
- Fry the spices. heat the olive oil large frying pan. Add the chopped onion and fry until translucent. Combine onion and minced garlic and sauté until fragrant.
- Cook the spinach. Add spinach and stir until softened.


- Stir in the egg base. In a large bowl, whisk eggs. Add heavy cream, salt, pepper, and baking powder (if using). Stir to combine.
- Add cheese. Stir the shredded cheese into the egg mixture.
