Ingredients and Substitutes
This section explains how to choose the best toppings for Roasted Garlic Parmesan Fries, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.
- Yukon Gold Potatoes – I use Yukon Gold potatoes because they have a rich buttery flavor and create the perfect balance between crunchy on the outside and light and fluffy on the inside. You can also use russet potatoes or any other variety you like.
- olive oil – Helps seasonings stick and ensures chips are crisp. Avocado oil or your favorite cooking spray will also work (although it will take several sprays to achieve the desired amount of oil).
- parmesan cheese – I used pre-grated parmesan cheese For convenience. Add some flavor at the end.
- garlic powder – I prefer this over fresh minced garlic because it won’t burn.
- salt and pepper – You will need sea salt, black pepper and chili. Check out more seasoning ideas below!

How to Make Garlic Parmesan Fries
This section shows how to make Parmesan garlic fries, with step-by-step photos and details about the technique to help you visualize it.For full instructions, including amounts and temperatures, see recipe card below.
- cut. cut potatoes into chips chef knife. I recommend about 1/3 inch thick. (Baking time may vary if yours is a different thickness, 1/3 inch achieves crispy outside and soft inside.)
- soak. Place the chips in a large bowl of cold water, enough to submerge them. Soak for at least 20 minutes. Drain and pat dry with a kitchen towel.
Tip: Soaking is the key to super crispy Garlic Parmesan Fries!
This draws some of the starch out of the potatoes, which helps them crisp up when baked and also keeps them from sticking together.

- Prepare. Preheat oven.Grease 2 small and medium bakewareor a Extra Large Baking Pan.
- season. Place chips in a dry bowl. Drizzle with olive oil. Add grated Parmesan, garlic powder, sea salt, black pepper, and paprika. Throw on the coat.
- bake. Transfer the fries to a baking sheet, leaving space between the sheets. Bake Parmesan Garlic Fries in the oven until golden and crispy.
Variations: Air Fryer Garlic Parmesan Fries!
To cook in the air fryer, simply place the chips in a single layer in the basket. (Cook in batches, if necessary.) Fry at 400°F for about 15 minutes, shaking basket halfway through.

- cool. Let the fries cool for 5 minutes to make them crispier. Season with more salt, pepper, and Parmesan, if desired.

Seasoning Variations
I love the garlic and parmesan taste of these chips, but you can totally add whatever seasoning you like to them. Try these simple variations:
- Add a few teaspoons of chopped fresh herbs like parsley, thyme or rosemary
- topped with melted chips Garlic Butter or truffle oil
- Omit the parmesan and add fresh cilantro and a touch of fresh lime at the end
Or, just add 3 tablespoons of any of these seasonings for a unique flavor:
storage instructions
- shop: Store leftovers in an airtight container in the refrigerator for up to 7 days.
- Reheat: To reheat leftover garlic and Parmesan fries, spread them out on a baking sheet and bake at 400°F for 8-10 minutes, or until hot.
- freeze: You can freeze garlic parmesan fries after baking, or blanch them in boiling water before seasoning and freezing. Either way, the best method is to cool completely, spread out in a single layer on a parchment-lined baking sheet, and then transfer to a freezer bag once frozen solid. They keep for up to 6 months in the refrigerator, and you can freeze and bake them.
