- cherry tomatoes – You can roast any kind of tomato, but cherry tomatoes are one of the easiest types because you don’t have to cut them. I initially tested this recipe with cherry tomatoes, but when I took the pictures, I had grape tomatoes on hand and they worked just as well!
- avocado oil – High smoke point and mild flavor, perfect for roasted cherry tomatoes.You can also use Extra virgin olive oil Or refined coconut oil.
- garlic – Fresh minced garlic tastes best, but you can also use 1 tsp canned minced garlic For convenience, or just 1/4 to 1/2 teaspoon of garlic powder.
- sea salt & Black pepper
Variations: Add fresh or dried herbs, or balsamic vinegar!
For extra flavor, add 1-2 tbsp balsamic vinegar, 1/2 tsp italian seasoningor 2 tablespoons chopped fresh herbs such as fresh basil leaves, parsley, thyme or chives.

- season. Preheat oven. Add tomatoes, avocado oil, garlic, salt, and black pepper to a bowl. Throw on the coat.

Variation: Cut the tomatoes in half!
This isn’t really necessary since they’re small, but if you want more flavor in your roasted cherry tomatoes, you can cut them in half before roasting.

Bake the cherry tomatoes in the oven for 20 minutes, turning halfway through.

In a mixing bowl, combine tomatoes, avocado oil, garlic, salt, and black pepper. Throw on the coat.
