What is Elliott?

Elote literally means “corn” in Spanish, but the name usually refers to grilled corn coated with mayonnaise, cotija cheese, and spicy spices. It is a popular street food in Mexico and the United States, and is also commonly referred to as Mexican street corn.

Ingredients and Substitutes

  • corn – I recommend sweet corn for this elot recipe, but technically any kind will do. You can use fresh corn on the cob, or even thawed frozen corn. If using fresh corn, remove the husks and silks.
  • mayonnaise – I try to do homemade mayonnaise When I have time (it only takes 5 minutes!), but store-bought mayonnaise will do just fine.
  • sour cream – For the most classic flavor, you can also use Mexican crema. Alternatively, Greek yogurt or crème fraiche will work too.
  • lime juice – Lemon juice can also be substituted.freshly squeezed for optimal flavor, but bottled For convenience, if desired.
  • paprika – This elot seasoning adds a spiciness to the dish and accentuates its flavour. If you like spice, you can substitute ancho chile powder, cayenne or tagine, or add a little hot sauce at the end.

How to Make Mexican Street Corn
