Ingredients and Substitutes

- radish – Use medium sized carrots so you can cut them into strips. You can use baby carrots, but they will cook faster (up to 10 minutes).
- Honey – I used Wholesome Yum Honey For a sugar-free version, but regular honey or maple syrup will work too. You can also leave out the honey entirely if you like.
- olive oil – I find that the carrots are crispier and tastier when using 2 tablespoons of oil, but you can use 1 tablespoon less. You can also use avocado oil.
- fresh rosemary – Chopped rosemary adds flavor to the carrots. You can also substitute other herbs, such as fresh thyme or dill—or leave them out altogether.
- spices – I used sea salt and black pepper, but you can use other spices, like garlic powder and onion powder, for extra saltiness.

How to Cook Carrots in the Air Fryer

- Prepare the carrots. Wash, dry, peel and trim carrot ends.Using a sharp tool, cut medium carrots in half lengthwise and large ones in quarters lengthwise Knife.
- Mix seasonings. Stir together honey (if using), olive oil, rosemary, salt, and pepper.

- shop: Cool completely, place in an airtight container, and store in the refrigerator for up to 3 days.
- Meal Prep: Wash the carrots, dry them, chop them, peel them, and soak them in cold water, then store them in the refrigerator for up to several days, changing the water daily.
- Reheat: Reheat in a preheated air fryer at 375°F (190°C) for 3-5 minutes.
- freeze: Like other types of cooked carrots, cooked carrots can be frozen for up to 3 months. Let them cool completely, then freeze in zip-top bags.

Wash and dry the carrots. Trim the ends (most of the very thin part should be cut off as it will burn quickly).use one Knife, halve carrots lengthwise for medium or quarter for large. You should end up with strips about 3/4 inch thick.

In a large bowl, toss carrots with honey (if using), olive oil, rosemary, salt, and pepper.If you have time, you can set aside to marinate 20 minutes (this is optional).

I also like to add 2-3 fresh rosemary stalks here, but this is optional.Air fryer 12-15 minutes, shaking the basket halfway through, until the carrots are golden and slightly crisp. Cooking time will vary depending on the thickness of the carrots. Repeat with other batches if desired (mine made two batches).
