So even though where I live now is too cold for outdoor smores, I made these keto smores bars right away with marshmallows. (but Yes, they’re also great for grilling over a campfire or making a plain smoke! )

How to Make Keto Smores Bars

- Make the crust. Lay the baking sheet (this is the perfect size) with parchment paper. In a bowl combine almond flour, Besti brown, cinnamon and salt. Melt butter and keto honey in a small bowl and whisk until smooth. Combine melted butter mixture with dry ingredients.
- Bake the crust. Add 2/3 of the crust mixture to the pan and press into place. Bake until golden brown around the edges. Let cool for about 5 minutes.


- Layered chocolate and marshmallows. spread chocolate chips on the crust. Arrange the halved marshmallows on top of the chocolate.


- Add toppings. Press remaining graham crust dough over marshmallows.
- bake. When the marshmallows are golden brown, remove the tomato sauce from the oven. (You can also place the pan under the broiler for a minute or two if you want them to be more browned.) Let cool partially, then remove from pan and serve warm.
Tip: For the best marshmallow texture, serve chocolate bars warm.
They’ll be too soft to hold, but will have a sticky marshmallow texture. After cooling, they will be firmer but the marshmallows will firm up a bit. You can reheat them in the microwave if you want, but keep in mind that the tops will continue to brown.


storage instructions
- shop: Cool completely and store in a covered container for 3 days, or in the refrigerator for 1 week.
- Reheat: Heat the keto smores in the microwave in 15-second intervals until the marshmallows are soft again.
- freeze: Wrap individual keto smores sticks in plastic wrap and store in a freezer safe container for up to 4 months. Thaw at room temperature.

Preheat oven to 350°F (177°C).line safety 8 x 8 inch baking dish and parchment, the paper rises along the sides of the pan. on hold.

In a large mixing bowl, whisk together the almond flour, Besti Brown, cinnamon, and sea salt.

Combine butter and keto honey in a small bowl. Heat in microwave until butter melts. Blend until mostly smooth.

Add melted butter mixture to dry ingredients and toss to combine.

Transfer all but 1/3 cup of dough to prepared pan, then top with spatula. (reserve 1/3 cup for topping).

bake 10-12 minutes, until the edges turn golden.let the crust cool 5 minutes.

Sprinkle chocolate chips over crust. Arrange the halved marshmallows over the chocolate, then crumble remaining dough mixture over the marshmallows.

bake approx. 10 minutesuntil the marshmallows are slightly golden.

If you want a darker marshmallow, place the pan under the broiler for approx. 1 minute, until it turns brown to your liking. (Watch them carefully so they don’t burn.)

Let the keto smores bars cool 10-15 minutes in the pan until they are no longer piping hot but still warm, then gently lift with the edges of the parchment paper and slice.

For the best marshmallow texture, serve the bars while they are hot. They’ll be too soft to hold, but will have a sticky marshmallow texture.
