this delicious italian Antipasto Salad Recipe Suitable for all occasions!It makes a great addition to dinner parties, potlucks, barbecues (especially Memorial Day, Labor Day or american independence day!) … your name.I originally created this recipe to be grain free italian spaghetti salad (“antipasta salad,” if you will, ha!), and realized Appetizer Salad In fact, it is “a thing” in itself.
This dish combines classic cured meats and cheeses with fresh Italian Pickled Artichoke Salad, kind of like an appetizer platter (or charcuterie board) in a bowl.If you like Caprese Salad, you’ll love this too. It has some of the same elements, plus the perfect antipasto dressing to tie it all together. Even my kids love it!

Ingredients and Substitutes

Appetizer Salad:
- meat – Chopped Genoa salami and prosciutto are classic meats, but you can add pepperoni, ham, or deli turkey for a lighter version.
- vegetable – This salad combines fresh grape tomatoes (or cherry tomatoes) for a delicious Kalamata Olives (alternatively, green or black olives), pepperand canned artichoke hearts For the final flavor combination. You can also add romaine lettuce, red peppers, cucumbers, red onions, or other vegetables of choice. Cut everything into bite-sized pieces.
- cheese – If you can’t tolerate dairy, you can cut it out. Otherwise, fresh mozzarella adds a creamy and cool flavor. It’s also delicious sprinkled with grated Parmesan or shredded provolone.
- fresh basil – Adds the perfect bright flavor, but you can also use oregano, parsley, or chives for an aromatic boost.
Appetizer Salad Dressing:
- olive oil – similar to mine Homemade Italian SauceUse mild olive oil for this dressing, but you can use extra virgin olive oil or any type of oil such as avocado, coconut, or even nut oils.
- white wine vinegar – This will emulsify the dressing and increase the acidity. You can substitute any type of vinegar, such as apple cider vinegar, red wine vinegar, or balsamic vinegar, or just lemon juice. If you want to add more complex flavors to your dressing, add 1-2 teaspoons of Dijon mustard.
- sea salt & Black pepper – You don’t need to put a lot of salt because there is a lot of salt in the meat.

Variations: Appetizer Pasta Salad!
With other ingredients, add 1 lb cooked and cooled pasta such as rotini, fusilli, Zucchini Noodles, or any pasta you like. You may need to prepare additional dressings.
How to Make an Antipasto Salad

- Make a savory salad dressing. in a large bowl, brush Together olive oil, white wine vinegar, sea salt and black pepper.
- Add salad ingredients. Place meat, mozzarella, and vegetables in bowls and place over dressing. (You can also mix the dressing in a small bowl and pour over the salad in the larger bowl.)


- Toss salad to coat. Add fresh basil just before serving.


storage instructions
- shop: Store chopped salad in an airtight container and refrigerate for 2-3 days. If possible, store basil separately and add just before serving.
- Meal Prep: You can make the salad ahead of time and store in the fridge without the basil. If you don’t add basil it will last for a few days.
