Homemade Breakfast Sausage Recipe

Learning how to make your own with your favorite store-bought food is one of the best feelings. This Homemade Apple and Sage Breakfast Sausage is one of my favorites…and possibly the best breakfast sausage ever.

This recipe is a recipe I shared from Diane Sanfilippo’s New York Times bestseller, Practical Paleo, has sold over 500,000 copies! The book is full of guides, resources, recipes, and more—including, of course, this mouthwatering breakfast sausage recipe.

These sausage patties are delicious and perfect for breakfast (I like to serve them with eggs and avocado). They also freeze well, so make extra and keep them on hand for easy breakfasts throughout the week.

How are breakfast sausages different from regular sausages?

The main difference is the seasoning used!

Breakfast sausages are often flavored with sweeter seasonings such as sage and brown sugar or maple and cinnamon. “Regular” sausages, on the other hand, are often flavored with more flavorful seasonings such as garlic, paprika, Italian seasoning, pepper, etc.

Required raw materials

  • Ground pork: Pork is the classic meat for breakfast sausage, but you can also use ground chicken or turkey.
  • apple: Any variety of apple will do! It should be chopped and squeezed out as much water as possible.
  • onion: Chopped onions add a little extra sweetness to the sausage.
  • Breakfast Sausage Dressing: This breakfast sausage seasoning is a sweet and savory blend of granulated onion, granulated garlic, dried parsley, ground cinnamon, dried sage, sea salt and black pepper.

How to Make Breakfast Sausage

These breakfast sausage patties are easy to make from scratch! In just 10 minutes, you can have fresh breakfast sausages!

  • To make the sausage patties: In a mixing bowl, combine pork, apples, onion, spices, and sage. Mix well by hand, then divide into 8 even patties.
  • saute: Melt ghee or butter in a large skillet over medium heat. When hot, add the patties and cook until heated through and browned.

Elective: If you want to spice things up a bit, fry some sage leaves in the remaining lard in the pan until crispy. Use these to garnish your sausage patties!

  • You are over mixing. Overly processed meat will take on a tough, dry, almost rubbery texture. I recommend stirring by hand until fully combined.

  • They were overcooked. Anything overcooked will inevitably dry out. For best results, check the internal temperature with a meat thermometer. It should be 145°F!
