It comes together quickly and can be done ahead of time…because it gets better with time!But aside from convenience, this hearty Broccoli and Bacon Salad There are also incredible flavors.

Broccoli Salad with Bacon and Cheese is a heartier alternative to a leafy green salad. You can combine chopped broccoli with crunchy toppings like red onion, sunflower seeds, and bacon and toss them in a homemade creamy dressing. Unlike typical green salads, this one is also easy to make ahead because it won’t wilt in the fridge.

Bacon Broccoli Salad:

  • fresh broccoli florets – Cut your own from fresh broccoli heads, or buy bags for convenience. Make sure the pieces are small enough to hold bite-sized pieces.If you don’t have enough broccoli on hand, you can also make one Broccoli Cauliflower Salad.
  • shallots – Adds crunch and light sweetness. You can substitute white or yellow onions if desired, but red onions are better for this recipe.

  • cheddar cheese – Freshly chopped, diced for a different texture, or pre-shredded cheese to save time. For a dairy-free or paleo variant, you can substitute shredded carrots (remember, it will be higher in carbs).
  • sunflower seeds – Use shelled seeds, raw or roasted, according to your preference.If you can tolerate nuts, you can also use chopped walnuts, pecans, almonds or any Keto Nuts you like.
  • avocado – Adds extra healthy fats, perfect for a tomato broccoli salad! Make sure your avocados are ripe and soft.

Cream Dressing:

  • mayonnaise – I like to use Homemade Avocado Oil Mayonnaise, but any type you like will do. You can also lighten it up by substituting some mayo for sour cream. If you want an extra creamy dressing, increase the amount of mayonnaise to 1 cup.
  • olive oil – Season with extra virgin olive oil, or any neutral oil you like, such as avocado oil.
  • white vinegar – Makes the dressing a bit pungent. Apple cider vinegar or red wine vinegar will also work.
  • Besti Luo Han Guo Powder Allulose Blend – Use 0g net carbs to slightly sweeten the dressing and dissolve completely smooth.you can also use Powdered erythritol or different keto sweetener, as long as it is in powder form.If you don’t need the salad to be sugar free (or use Keto Honey instead! ). You can technically omit the sweetener entirely too, but I think the best broccoli salad recipes have a little sweetness in the dressing.
  • seasoning – including black pepper (optional) and garlic salt.
