ingredients you need

This section explains how to choose the best ingredients for grilled cajun cod, the role of each ingredient in the recipe, and substitution options. See recipe card below for measurements.

  • cod fillet – While this is a recipe for grilled cod, you can also use this technique with other types of white fish, such as flounder or Tilapia.
  • butter – Unsalted butter adds a rich flavor to this recipe, but olive oil works too.
  • lemon juice – Use freshly squeezed juice for best flavor, or bottled lemon juice For convenience. Fresh juice makes a lot of sense here, though, because you’ll need fresh lemon slices anyway.
  • indian seasoning – A mixture of paprika, garlic powder, sea salt, oregano, thyme, onion powder, paprika, and red pepper flakes. You can make this seasoning in advance, or make Homemade Cajun Seasoning.
  • lemon slice – Add extra flavor to fish.

How to Baked Cod in Foil

This section shows how to make cod on the grill, with step-by-step photos and details about the technique. See the recipe card below for full instructions.

  1. Prepare. Preheat half of the grill burners to medium-high heat. Place each cod on a flat sheet of foil (large enough to wrap the fillets later). Pat the fish dry.
Tip: Why only preheat half of the grill burners?

Tip: Why only preheat half of the grill burners?

Since the fish is very delicate, we are grilling the cod over indirect heat to prevent it from burning or drying out.

  1. brush. Whisk together the butter and lemon juice and brush the fillets.
  2. season. Season both sides of the cod with Cajun seasoning and top with a slice of lemon.

Seasoned raw cod fillets and topped with lemon slices.
  1. fold. Fold foil around the fish, leaving room at the top for steam to collect. Create a seam and seal tightly.
  2. Baked. Cook the cod on the side with the burner off (also called indirect heat) until the fillets are opaque and flake easily. I like to garnish with fresh parsley.

How to grill cod directly on the grill?

You can cook cod directly on the grill (without foil) using the correct method:

  1. Preheat well. Not getting the grill hot enough will cause the fish to stick to it.
  2. Direct heat cooking. Unlike foil-roasted cod, grilled cod directly on the grate is best done directly on medium-high heat (about 400-450 degrees Fahrenheit).
  3. Bake without moving. Place the cod on the grill until ready to flip. Trying to move the fish before it’s ready to flip can cause it to tear or fall apart.
  4. Flip when 80% complete. like Grilled Salmon, it is best to bake the first side of the cod until 80% done before flipping. This will allow it to release cleanly from the grill.
  5. use one fish spatula Carefully flip, or grill the basket to make it easier.
  6. Add mayonnaise. It’s not required, but adding mayo to the marinade can help the fillets release more easily.

How long does it take to bake cod?

Grill cod directly on the heated side of the grate (direct heat) for 7-9 minutes or indirect heat (on the side with the burner off) for 10-12 minutes. Indirect heat reduces the chance of the cod being charred or overcooked.

For best results, use meat thermometer To make sure the cod is fully cooked and check the internal temperature – it should reach 140-145 degrees Fahrenheit.

seasoning changes

seasoning changes

Instead of Cajun seasoning, try these variations:

  • Lemon Pepper Seasoning – make Homemade Lemon Pepper Seasoning Substitute for Cajun spice.
  • Taco Seasoning – Swap the Cajun seasoning with Homemade Seasoned Taco Make tacos with this cod!
  • vanilla sauce – brush fish Basil Pesto Instead of using butter and spices. This is best cooked in a foil pack so it doesn’t burn from direct heat.
  • Compound Butter – In place of regular butter, add your favorite fresh herbs Compound Butter And add 1 tablespoon of butter to each fillet instead of spice.
  • Lemon Aioli – Brush fillets Lemon Aioli instead of butter. This also helps reduce sticking, making it a great option for cooking cod directly on the grill.

Storage Instructions

  • Shop: Keep the fish covered in the refrigerator for 2-3 days.
  • Reheat: Gently heat fillets in a hot pan or 350°F oven until heated through. You can also reheat on the grill over medium heat.
