How to Make Oven Roasted Mushrooms with Balsamic
Are you wondering how to roast mushrooms in the oven? OK! You have come to the right place. It’s as simple as making a vinaigrette marinade, tossing the mushrooms in and letting them bake in the oven.
Pro tip: It is important that all mushrooms are cut to the same size so that they cook at the same rate. Depending on the size of the mushrooms, you may need to cut them in half or quarters.
The first step is to mix the marinade together. It’s a simple (yet delicious) combination of olive oil, balsamic vinegar, garlic powder, fresh herbs, and of course some salt and pepper.
Pro tip: Use a good quality balsamic vinegar for the best flavor. This is an ingredient worth spending a little more.

Next, we poured the mushrooms into the marinade and tossed gently until they were all evenly coated with the marinade.
We then spread the mushrooms on the baking sheet, making sure each one was touching the pan and roasted until they were soft, juicy and slightly crinkled.
Pro tip: When roasting vegetables, don’t crowd the roasting pan. You want each piece of vegetable to be in contact with the pan and have plenty of open space. When the veggies are crowded on the pan, they will be steamed instead of roasted. Not what we want to happen here.

This recipe for oven-roasted mushrooms is delicious, but if you want more of a balsamic flavor, you can drizzle them with a drizzle of balsamic. To do this, simply cook the balsamic vinegar until thick and reduce the volume.
Are grilled mushrooms good for you?
Yes! Oven roasted mushrooms are good for you. They are a nutrient-dense vegetable. Here are just some of the benefits:

- Rich in antioxidants, especially selenium
- Low in carbs (great for us!)
Can you freeze grilled mushrooms?

Stir up a batch of these Roasted Mushroom Caps, let them cool, then freeze in a single layer on a baking sheet, then transfer them to a freezer bag. This is a great way to use up mushrooms before they go bad, or to store and prepare a meal ahead of time.

How to Store Balsamic Roasted Mushrooms
After making these balsamic mushrooms, you have three options:
- Eat them all, straight out of the pan, the second they come out of the oven. (Don’t burn your mouth, I dare you not to eat them right away!)
- Store them in an airtight container in the refrigerator. They will keep for 3-5 days in the refrigerator.
- If you don’t think you’ll be eating them in a few days, see the freezing instructions above.

Preheat oven to 400°F (204°C).

In a large bowl, whisk together olive oil, balsamic vinegar, thyme, parsley, garlic powder, salt and pepper.

Add the mushrooms and stir to combine.

Arrange the mushrooms in a single layer bakewareso that everyone has access to the pot.

Put the mushrooms in the oven 25 minutesuntil soft and wrinkled.

To serve, drizzle with reduced balsamic (optional) and sprinkle with more fresh thyme/parsley for garnish.

To reduce the balsamic, simply simmer the balsamic over low heat until it thickens and coats the back of a spoon, about 10-15 minutes.
