Ingredients and Substitutes
This section explains how to choose toppings for the best burger, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.
- Ground beef – I use 85/15 beef for juicy homemade burgers, but 80/20 beef is also juicy. 90/10 Ground beef is usually not as juicy, but with the ingredients I added below, they were still quite juicy.
- secret recipe – The secret to a juicy burger is in the mix olive oil and Worcestershire sauce Add to meat before cooking! This locks in moisture and flavor, giving you the juiciest burger possible.
- seasoning – I like to keep it simple with sea salt (a teaspoon per pound of meat), black pepper, and a little garlic powder. You can also use 2 tsp canned minced garlic as well as. From a flavor standpoint, the salt is actually the most important thing. A good rule of thumb is to use one teaspoon per pound of meat. The first time I read somewhere that this was Julia Child’s recommendation for meat, she was right!
Variations: Use other seasonings.
In place of the garlic powder, salt and pepper, use 2 teaspoons of any seasoning blend you like.try jerk seasoning For a spicy and refreshing taste, montreal seasoning delicious steak flavors, or italian seasoning for more subtle flavors.

- rest. Keep away from heat sources. Let the homemade burgers sit for a few minutes before serving to allow the juices to settle.
Tips for the Best Burgers
Whether you’re using a grill or making stovetop burgers, follow these tips to make sure you end up with the best burger recipe:
- Don’t overprocess meat. Blending or mashing too much can drain the juices and cause the burger to be tough. Instead, use gentle kneading motions to combine the ingredients into the ground beef.
- Use cold hands. This will prevent the meat from getting hot and stretchy. Just wash your hands with cold water before using it.
- Be gentle. Also form the patties gently to avoid draining the juices. You want the moisture to stay in the burger and not escape.
- Do a fingerprint. Making a thumbprint in the middle of each patty will keep the burgers from puffing up while cooking. This happens because the heat pushes the juices down the middle, so if you start with a cavity in the middle, the burger will be nice and flat when done.
- Turn up the heat. For super juicy burgers, you want to sear them for maximum flavor. Turn the heat up to medium-high, making sure your grill or skillet is preheated before adding the meat.
- Do not move them. Don’t check on your burgers by lifting the lid of the grill (or the pan lid if making stovetop burgers) or moving them around. After adding the patties, let stand for 4-5 minutes, then flip only once.
- Don’t hold down the burger. Whatever you do, don’t press down on the burger with a spatula. I don’t know who came up with this idea, but it really squeezed all the juice out of it!
- Let them rest, do not cut open for inspection. If you cut the burgers open to see if they are done, all the juices will leak out and you will end up with a dry burger. Instead, use a meat thermometer or the schedule below to check for doneness, and wait a few minutes after cooking before eating.
How Long to Grill Burgers?
Grill burgers for a total of 6-8 minutes to medium done.
How long does it take to cook a burger on the stove?
Cook burgers on stovetop for a total of 6-8 minutes to medium done.
What is the temperature of the burger?
The USDA officially recommends at least 160°F (well done) as a stove or grill temperature for burgers, but for juicy burgers, I recommend medium heat (140-145°F).if you have a meat thermometerwhich is the most reliable way to test doneness.
Use these times and temperatures as a guide for the best burger recipes:
Maturity | ℉ | Celsius | total cooking time |
---|---|---|---|
rare | 120 to 125 degrees | 49 to 52 degrees | 4-5 minutes |
medium rare | 130 to 135 degrees | 54 to 57 degrees | 5-6 minutes |
Moderate | 140 to 145 degrees | 60 to 63 degrees | 6-8 minutes |
Nakai | 150 to 155 degrees | 65 to 68 degrees | 8-9 minutes |
well done | 160 to 165 degrees | 71 to 74 degrees | 9-10 minutes |
At rest, the internal temperature will rise another 5 degrees above the above, so these temperatures are when you are away from the heat source.
