Chili Ingredients and Substitutions

This section explains how to choose the best ingredients for chili, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.

  • olive oil – for frying. Any heat-safe cooking oil, such as avocado oil, will also work.
  • onion – I used white onions, but you can also use yellow onions.
  • garlic – I used 8 cloves of fresh garlic but you can use 4 tsp canned minced garlic For convenience. If you don’t have either, you can substitute 1 teaspoon of garlic powder and add it at the same time as the spices.
  • Ground beef – I prefer to use 85/15 grass fed ground beef. Any lean cut of beef you like will work, or you can substitute turkey, chicken, or sausage without casings. If you’re using high-fat ground beef, such as 80/20, you may want to drain it after browning. You can also substitute ground turkey, chicken or even pork.
  • diced tomatoes – You can also fire roast diced tomatoes for extra flavor.
  • ketchup – Adds a tangy flavor with just a touch. This chili recipe uses 1 can, which is 3/4 cup tomato paste. If you don’t have any on hand, you can substitute 2 1/4 cups tomato paste.
  • green chili – These chilies have a very mild heat, but feel free to omit them if you don’t like them. You can also add jalapenos if you like the spice. Don’t lose.
  • beans – For this chili recipe, I used a combination of black beans and pinto beans, but you could also use kidney beans or even lentils. Drain and rinse well before use.
  • beef soup – Adding beans made the dish very thick, so I added broth to thin it out a bit. low sodium beef broth It is best to avoid dishes that are too salty. If you don’t have any, low sodium chicken broth or bone broth will work too.
  • Worcestershire sauce – This secret ingredient adds umami and a slight sweetness.
  • paprika – This classic chili recipe uses 4 tablespoons of paprika (1/4 cup). This may seem like a lot, but it actually adds the perfect amount of spice and flavor. If you want it milder, you can use less, or use paprika If you want more spice. Keep in mind that paprika in the US is actually a blend of spices, so if you’re in another country, you may need less spice if your paprika is made entirely of chiles.
  • other spices – ground CuminDry oreganosea salt, black pepper and optional bay leaf. If you like a smokier flavor, you can also add smoked paprika.
