Black Chicken Seasoning:
This recipe uses my simple Blackened Seasoning Recipe, which contains the following ingredients, but you can also use store-bought ingredients. (If unsalted, add 1 teaspoon of salt per pound of chicken.)
chicken:
- chicken – Get chicken breasts that are a similar size so they cook evenly. You can also use boneless, skinless chicken thighs, but the cooking time may vary slightly.
- olive oil – for frying. Other types of oil, such as avocado oil, can also be used, but make sure you use a heat-resistant oil.

- season. in a small bowl, stir together Easy Blackened Chicken Seasoning Spices. Pat the chicken breasts dry with paper towels. Season both sides with the blackened seasoning.
Tip: For more tender meat, use a meat mallet.
Mash the chicken before seasoning meat mallet until an even thickness is achieved. Doing so also reduces cooking time.
- burnt. heat one cast iron skillet at high temperature. Turn to medium-high heat, add olive oil, and heat until shimmering. Add chicken and cook until browned.


- bake. Transfer skillet to preheated oven and cook until chicken is cooked through (use meat thermometer to check).
- tent. As soon as the roast is done, remove the charred chicken from the skillet. Cover with foil and let rest before serving and slicing.


Tips for the Best Blackened Chicken
Never made this dish before? Don’t worry – follow these tips to make the best blackened chicken ever!
- heating oil. The olive oil should be glistening before adding the chicken to keep it from sticking to the skillet.
- use cast iron。 You can also use an oven-safe stainless steel skillet or a regular skillet, but cast iron works best because it heats well and evenly. Cooking time in the oven may take longer if not using cast iron.
- Flip only once. For the best sear, don’t move the chicken around after it’s in the pan—just move once to flip.
- Salt water, if you like. If you want your chicken to be juicy, you can brine it first (see my Grilled Chicken Breast how-to recipe). Rinse well before drying and seasoning.

- shop: Cool the chicken completely, then store in an airtight container in the refrigerator for up to 4 days.
- Meal Prep: Cajun black chicken is great for lunch or as a salad。 Just store it in the fridge or freezer until you’re ready to eat it.
- Reheat: Reheat in a 350°F oven. Microwave also works, but can be drier.
- freeze: Wrap chicken tightly and freeze for up to 6 months. Thaw overnight in the refrigerator before reheating.

Preheat oven to 375°F (191°C).

Stir together the spices. (You can also do more seasoning black here, this recipe uses only 2 Tbsp. )

Pat the chicken breasts dry with paper towels. Season both sides with the blackened seasoning.

heat one cast iron skillet at high temperature. Reduce heat to medium, add olive oil, and heat until shimmering (this happens quickly). Add the chicken breasts.cook about 2 minutes on each side, until browned.

Transfer skillet to oven to cook 7-10 minutesuntil the internal temperature of the chicken reaches 165°F (74°C). (You can also take out a few degrees ahead, if you like, and the internal temperature will rise a few degrees while resting.)

Remove chicken from skillet immediately to prevent overcooking.for tent defeat and rest 5 minutes before serving.
