Ingredients needed for Buffalo Chicken and Cheese Taquitos

- Avocado Oil Spray: See the precautions below for things to avoid when using oil spray on your air fryer.
- corn cake: We have tested with corn, grain free (Siete Foods brand and whole wheat). For this flavor combination, it’s your personal preference to use.
- chicken shreds: I like to make a batch of mine Instant Pot Shredded Chicken But feel free to use the roast chicken here for other shortcuts!
- hot sauce: I use Frank’s!
- Shredded mozzarella or cheddar cheese: Both will work great!
- garlic powder and black pepper

Fuel injection precautions
Something worth noting, whether using Avocado Oil Spray, olive oil spray or any other oil spray, avoid oil sprays with propellants/aerosols. Aerosol spray cans can damage your air fryer basket. It is best to use a good quality lubricator or spray without any added ingredients.

what type of tortilla to use
We tested this recipe with tortillas, almond flour tortillas (from Siete Foods), and whole wheat tortillas.
all is well! We also know that you can easily use traditional flour tortillas if you prefer. Just make sure they’re fully heated (see below), and if needed, spray them with an oil spray where they seal.
For this chicken taquito flavor combo, my husband prefers grain free or whole wheat to corn, while the rest of us love all options! It’s definitely a personal preference here.
Tips for scrolling Taquitos
My best tip for rolling taquitos is to make sure your tortillas are heated up! If you skip this step, your tortillas will not be as flexible and may break when filling or unfolding. So take your time to heat up the tortillas.
There are a few different ways to heat tortillas, but the most common is to heat them one by one in a hot pan. Or soften them in the microwave. I don’t recommend heating them on an open flame or broiler when making enchiladas as they will get too crispy.
If you are heating them one by one, place the heated tortillas in a towel while heating the other tortillas to keep them warm.
Once you’ve heated the tortilla, place the filling in a small mound from the center toward the end of the tortilla. Then, roll it up tightly and place seam side down on the prepared baking sheet.
Parent type: Do not roll it too tightly to avoid pressing the filling to the edges of the rolled tortilla. As it bakes, the filling will bubble and start to run off the sides. If you push the filling toward the edge of the tortilla before baking, more filling will spill out the sides than necessary.
Grilled Buffalo Chicken Tacos
While I’m totally addicted to taquitos in the air fryer right now, you can too bake them in the oven on a baking sheet. You don’t need to use a ton of oil to make these crispy, but you do need to use enough oil to actually crisp them up.
We recommend rubbing or spraying oil on the parchment paper, then doing the same with the top of the taquitos after rolling.we like this Avocado Oil Spray for this. It distributes the oil evenly on the baking sheet and tortillas without adding too much, the only ingredient in this spray is oil!
How to Make Baked Chicken Taquitos:
- Preheat oven.
- In a bowl, combine shredded chicken, hot sauce, garlic powder, black pepper, and shredded cheese.
- Heat tortillas.
- Fill and roll your burrito.
- Bake chicken taquitos in a 400ºF oven for about 15-20 minutes.
- They should be flipped halfway through baking.
- I recommend roasting them for 10 minutes first, then flipping and then roasting for a while to get them golden and crispy.
- Baking time will vary depending on the type of tortilla you are using.
Buff Chicken Taquitos Air Fryer
- Preheat the air fryer.
- In a bowl, combine shredded chicken, hot sauce, garlic powder, black pepper, and shredded cheese.
- Heat tortillas.
- Fill and roll your burrito.
- Cook in batches, flipping halfway through, until tortillas are slightly crisp and filling is melted.
- Garnish with shredded lettuce, salsa, guacamole, cilantro, hot sauce and more as desired and enjoy the burritos!

What type of air fryer to use
We’ve tried a lot of air fryers over the years.we already have and use it Basket, This Instant Pot Air Fryer Accessories and this toaster air fryer! They all work great! This is a personal preference of your choice. Do you want/need a new toaster? Do you have room for a separate new device? Consider all of these things when shopping and decide which ones work for you.
The thing to note about air fryers is that some of them can be quite small. If you have a small capacity, you may need to make air fryer tacos in batches. While I’m guessing if you’ve been using this air fryer for a while, you’ve learned it. Cook in batches, and if you have a small capacity air fryer, make sure there is enough air circulation around the wings so they will be crispy.
Freezing and Reheating Chicken Taquitos
We love a delicious freezer meal and these Buffalo Chicken Wraps freeze well!I always have chicken taquitos in the fridge, or bring them to new mother or a friends in need.
Freeze them: Let them cool completely. Freeze them flat on a tray until they freeze solid (about 8 hours in the freezer), then transfer them to a freezer-safe bag. They can be kept for 3-6 months.
To reheat them: When ready to heat, place in the oven or put back in the oven and bake for about 15-20 minutes, flipping halfway through, until very hot and crisp.

Air fryer directions:
- Preheat the air fryer to 400ºF and spray with avocado oil cooking spray.
- In a bowl combine chicken, hot sauce, cheese, garlic powder and black pepper.
- Heat tortillas in a hot cast iron skillet or microwave until malleable. Place 1 tortilla on a flat surface and pour about 1/4 cup of chicken mixture to the side. Roll the tortilla, spray the seam with cooking oil spray, and place it on a baking sheet or cutting board, seam side down, while making the remaining tortilla. Continue until all the filling is used up.
- Place in the air fryer, seam side down, and cook in batches for 6 minutes, flipping halfway through, until the tortillas are slightly crispy and the filling is melted.
- Serve with shredded lettuce, tomato, ranch or blue cheese sauce, cilantro, and hot sauce as desired for a burrito!
Oven Baking Directions:
- Preheat oven to 400ºF and line a rimmed baking sheet with parchment paper. Lightly grease the parchment paper.
- In a bowl combine chicken, hot sauce, cheese, garlic powder and black pepper.
- Heat tortillas in a hot cast iron skillet or microwave until malleable. Place 1 tortilla on a flat surface and pour about 1/4 cup of chicken mixture to the side. Roll the tortilla tightly and place on the baking sheet, seam side down. Continue until all the filling is used up.
- Lightly grease the top of the tortillas.
- Bake on the lowest rack of the preheated oven for 15-20 minutes, turning halfway through, until the tortillas are crisp and the filling is melted.
- Serve with shredded lettuce, tomato, ranch or blue cheese sauce, cilantro, and hot sauce as desired for a burrito!
