ingredients you need
This section explains how to choose the best ingredients for your bacon cabbage steak, what each ingredient does in the recipe, and substitution options. See recipe card below for measurements.
- bacon – I ordered the clean ingredient bacon from here, but either will do. However, do not use precooked as we will be using bacon grease for the marinade.if you want one vegetarian option, omit the bacon and increase the olive oil in the recipe by 2 tablespoons.
- cabbage – I prefer green cabbage for this recipe, but red cabbage will work too if you like. Any size head of cabbage will work. Just make sure you remove the outer leaves.
- garlic – Use fresh garlic for best flavor or canned garlic for convenience.
- olive oil – or avocado oil.
- lemon juice – Use fresh lemon juice for best flavor or bottled For convenience. Acidity contributes to flavor and softness. To change it up, try using balsamic vinegar instead of juice.
- sea salt (or kosher salt) & Black pepper

How to Cut Cabbage Steak
- Cut off the core. Cut off the bottom of the core (root) of the cabbage head to create a flat surface on one side.
- piece. Hold the flat surface against the cutting board and slice down from the top to make slices 3/4-inch thick. You can also make 1-inch slices if you want, but I prefer a little thinner to maximize caramelization.
Pickling Instructions
- mixed marinade. In a large plastic bag, combine olive oil, lemon juice, sea salt, and black pepper.
- Add bacon fat. Once the bacon is cooked, remove it from the pan. Let the bacon oil cool slightly, then pour into the marinade bag. Blend until combined.
- pickled. Add the cabbage to the marinade and coat well. Refrigerate for 30 minutes.
Tip: If you are in a hurry, you can skip the marinating time.
Instead, just toss the marinade in a small bowl and brush the marinade on both sides of the cabbage steak. However, I have found that they are more delicious if you have time to marinate for 30 minutes.

u003c!u002du002d wp:paragraph u002du002du003ernu003culu003ern tu003cliu003eu003cstrongu003eDon’t bake cabbage on foil. u003c/strongu003e Trust me, I tried it! You’ll get mushy cabbage that won’t crisp or caramelize. You need to place the cabbage steak directly on the grill. u003c/liu003ern tu003cliu003eu003cstrongu003e You will have some remaining blocks. u003c/strongu003e Because you put the cabbage directly on the grill, the small pieces will fall off.
