Easy Italian Chicken with Roasted Green Beans
Easy weeknight dinners are the best, especially for little ones! This quick-cooking Tomato Sauce Spicy Chicken is a delicious dinner you can make when you have less than 30 minutes to get food to the table.
This meal is low-carb, paleo-friendly, whole30-approved, and absolutely delicious. Talk about winning!
Required raw materials

For the chicken:
- olive oil: You'll coat the chicken with olive oil to enhance the texture and help the sauce stick. You can also sear it in a pan!
- chicken: You'll need one pound of boneless, skinless chicken breasts, sliced horizontally down the middle.
- seasoning: Our spice mix is a simple yet effective blend of Italian seasoning, salt and pepper.
- Fragrance: Sauté the onions and garlic together to create a flavor base for the tomato sauce.
- tomato: You'll need 1 1/2 cups of whole plum tomato paste.
- Optional plug-ins: I like to add some red pepper flakes for heat and some spinach for color!
Chicken tip!
Don’t forget to cut the chicken in half horizontally into thinner slices before cooking! Thinner pieces cook more evenly and faster.

- green beans: You will need two cups of fresh green beans, washed. You can buy these ready-made bags at the store to save time or prepare your own!
- olive oil: Coating green beans with olive oil helps them get the perfect roasted texture.
- seasoning: We paired these with the chicken, Italian seasoning, garlic powder, sea salt, and black pepper.




How to make this dish
- Cook mung beans: On a skillet, combine green beans with olive oil, Italian seasoning, garlic powder, salt, and pepper. Stir to coat the green beans well, then bake at 400°F until crisp-tender.
- Roast chicken: Heat a large skillet over medium-high heat and add oil. Pat the chicken dry with paper towels, season generously with Italian seasoning, salt and pepper, and add the chicken to the hot skillet. Fry for 3-4 minutes on each side or until browned all over.
- Make the sauce: Once the chicken is browned, add the onions to the pan and cook until softened. Next, add the garlic and cook quickly for about 30 seconds. Reduce heat to medium-low and add tomatoes and optional red pepper flakes. Cook until sauce is reduced and chicken is cooked through. Discard the red pepper flakes for less spice!
- Finish and serve: Taste and reseason as needed. If you're using spinach, add it to the pot and wilt it. Once the spinach is wilted, serve the chicken hot with the sauce and serve with freshly roasted green beans.
Can raw chicken be cooked in sauce?
Well, yes, I do recommend grilling the chicken before cooking it in the sauce, though.
Roasting it quickly at high heat before cooking gives the chicken a perfect, crispy exterior, plus the brown bits stuck to the bottom (which show up in the sauce) add lots of flavor.
Simmer the sauce over low heat to make it even more flavorful and tender!

Preheat oven to 400°F. Add green beans, olive oil, Italian seasoning, garlic powder, salt and pepper to pan. Stir to combine. Once the oven is heated, cook until the green beans are tender, about 10-12 minutes.
Meanwhile heat a large skillet over medium-high heat and add oil.
Pat chicken dry. Season both sides with Italian seasoning, sea salt and pepper.
Once the pan is hot, fry the chicken for about 3-4 minutes on each side until browned on all sides.
Add the onions to the pan and cook until translucent, about 5 minutes. Add garlic and cook 30 seconds.
Reduce heat to medium-low and add tomatoes, red pepper flakes (if using). Cook for about 10 minutes or until sauce has reduced and chicken is cooked through. Season additionally to taste. If adding spinach, add it at the end and allow to wilt.
Serve chicken warm with green beans or a side dish of choice.
