My readers keep asking me for more information Christmas recipesalthough I’m not personally celebrating, I had a great time creating this amazing piece Christmas Salad Recipe for all of you. I love using it for other fall and winter occasions too! This easy holiday salad has lots of bright colors and flavors and is easy to make in under 10 minutes.

Christmas Salad:
- arugula – I used arugula as the vegetable for a peppery flavor, but you could easily swap it out for spinach or mixed greens for a different flavor and texture.
- fruit – This Christmas salad is a combination of citrus, apple slices and pomegranate arils (seeds).You can also add or replace apple slicespear, Dried cranberriesOr other sweet citrus fruits (such as grapefruit, clementines, or regular oranges) for a similar holiday flavor.
- blue cheese – The salty, spicy flavor is perfect for balancing out all the sweet fruit, but if that’s not your thing, tangy feta or goat cheese are also great options.
- walnut – for austerity! You can also use walnuts or pistachios, or substitute jalapenos or sunflower seeds for a nut-free option.
Honey oil and vinegar sauce:
- olive oil – This forms the basis of the dressing. You can use avocado oil instead.
- apple cider vinegar – Add flavor and mix with olive oil to emulsify the dressing. White wine vinegar, white balsamic vinegar, or lemon juice will also work.
- Honey – I use Healthy Yum Natural Sugar Free Honey (Sweet and sticky, no aftertaste!), but regular will work too.
- sea salt and black pepper

- Prepare salad. Place arugula, citrus, apples, blue cheese, pomegranate seeds, and pecans in a large bowl or shallow dish.
- Make the honey vinaigrette. Whisk together the olive oil, apple cider vinegar, honey, sea salt, and black pepper.


- Throw them together. Drizzle the vinaigrette over the Christmas salad and toss to coat.

Storage instructions
Store leftovers in an airtight container with the dressing in the refrigerator for up to 1 day, or 2-3 days if the dressing is stored separately.
