What is Queso?
Queso Dipping Sauce is a Mexican-style cheese dip made from warm melted cheeses that are cooked together into a dipping sauce. Some varieties include vegetables or sausages, and some varieties just have a little spice. You may have eaten it at your favorite Mexican restaurant.
This cheese sauce in Crock Pot is made with salsa, it brings a little spice and a lot of flavor to the cheese-it is the perfect blend!

This simple queso recipe has only 3 ingredients: Shredded cheese, cream cheese and salsa! Here are some customized ideas…
- Choose your cheese. I chose Monterey Jack cheese to pair with other Mexican-style dips, but Colby Jack cheese, pepper jack cheese, white cheese or cheddar cheese are all good choices.Any semi-soft or semi-hard cheese It melts well. Many people like to use velveeta or American white cheese, but I prefer to use less processed cheese.
- Choose your salsa. Any salsa sauce you like will do.I used a can of salsa verde, but also Homemade tomato sauce or Tomato Avocado Salsa, also.If you want, you can even use a can of green chilies or Rotel, which is similar to Spin dipping sauce.
Ingredient tips: I recommend the salsa that is not too thick, Because the queso dip is usually on the smoother side. But if you prefer a thick dipping sauce, why not? You can also puree it in a blender at the end to make it smoother. (I didn’t muddy it, so the small pieces in the picture are from salsa.)
Other things you can add:
- Aromatics – Diced onions or mixed garlic works well, but I prefer to fry them before adding them. You can also choose a simpler route, adding onion powder and garlic powder.
- Diced tomatoes – You can use canned (drain first) or fresh.
- Green chili – Canned green chilies can replace salsa. Drain first.
- Ground beef – Make it into a meat sauce by adding beef! Cook it on the stove first, then add it to the slow cooker with the other ingredients.
- spices – Cumin powder, chili powder or chili powder works well here.
For vegetarian ingredients (aromatics, tomatoes, peppers), if you want a smoother cheese dip, you can puree them first, or cut them into cubes for texture.

Is it keto cheese?
Yes, cream cheese dip cheese is naturally low-carb and keto-friendly! Just make sure that your favorite queso has no added starch or fillers (this one!) and no matter what you dip, it doesn’t contain high carbohydrates. This particular queso recipe contains only 2 grams of carbohydrates per 1/4 cup.
Can you use a full-size slow cooker?
Yes, you can, but you need to increase the formula output by 2-4 times so that it will not be out of space. You can adjust the number of servings on the recipe card below to achieve this.

Storage instructions
Feel free to make this ketchup in advance! It takes about 2 1/2 hours to cook and melt in the slow cooker, so it is easy to start soaking the queso in the Crock Pot and then get ready for a party or a party a few hours later.
How long can the queso dipping sauce last?
