It’s a staple of Eastern European meals and has always had a place on our family table growing up—even if I didn’t always trust all those vegetables back then.It’s one of my favorite summers these days side dish.

- tomato – I used chopped roma tomatoes (aka plum tomatoes), but you can use any tomato variety. I also love this cucumber tomato salad made with halved cherry tomatoes or grape tomatoes.
- cucumber – I chose the smaller varieties because they are sweeter, more tender, and require less chopping. You can substitute in any common cucumber, from English to Persian. You can remove the peel if their skin is a bit tough.
- onion – I used red onions here, but sweet or yellow onions are also delicious.
- herbs – Fresh dill and fresh parsley add flavor and texture, but any fresh herb is great! Fresh basil leaves or chives are also good options.
- Extra virgin olive oil – the basis for making a simple vinaigrette.I recommend good quality olive oil (I like this!) brings out the natural sweetness of the dish. You can also use avocado oil, or any oil you like.
- red wine vinegar – Add broth and emulsify dressing. Rice vinegar, white wine vinegar, apple cider vinegar, lemon juice, and balsamic vinegar are all good substitutes for this tomato-cucumber salad.
- sea salt & Black pepper
Variation: Add cheese!
The best cheeses to pair with the flavors here are feta or fresh mozzarella balls.

- Chop the vegetables. In a large bowl, combine chopped tomatoes, cucumbers, red onions, and fresh herbs. on hold.
- Make the dressing. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper.
