Is there anything summer like fresh mussels? When my mom visited last week, she was really craving fresh seafood and there was plenty to go to. We went to the market to get some mussels and fresh ingredients and Craig put together the easiest and delicious beer steamed mussels and potatoes for dinner. We sat outside on the deck and enjoyed an al fresco dinner.

How to Make Beer Steamed Mussels with Potatoes
Beer steamed mussels
- Fresh mussels (we had about 1.5 lbs for 3 people)
- 1 high 16 oz. A can of beer (Craig used Scottish beer)
- salted butter (3/4 stick)
- 1 small to medium yellow onion
- 1 green onion
- 1/2 cup fresh parsley (chopped)
- salt and pepper
- 5-6 medium/large golden potatoes
- Better than broth flavored vegetable soup base (1 tbsp)
- 3-4 cups water
preparation and guidance
- Cook the potatoes first as they take the longest. Cut in half and cook in a large pot of salted water for about 40 minutes or until tender. After cooking is complete, remove the heat and drain the remaining water. Once cool enough, cut into quarters and set aside.
- Place mussels in a bowl or colander and rinse with cold water. Close the mussels if any are open. If it stays closed, that’s fine, if not, discard. After cooking, throw away any mussels that haven’t been opened.
- Thinly slice the onion, dice the shallot
- Sauté onion and shallots with 1 tablespoon butter until translucent, about 3 minutes over medium heat
- Bring a can of beer, water and broth to a boil and add the mussels
- Immediately cover and cook on low heat for 5-7 minutes (medium/high heat)
- Turn off heat, add potatoes, remaining butter, and freshly chopped parsley, toss
- Add salt and pepper to taste
- Serve immediately with toasted and buttered sourdough bread.
