While this pork tenderloin marinade does contain some sugar—natural sweetness from honey and balsamic vinegar—even combined, it has much less sugar than a typical barbecue marinade, so it has a much better impact on blood sugar .
The chopped garlic and whole grain mustard gave the marinade some texture, which I loved. Dijon is my usual mustard of choice, but sometimes the beads of coarser mustard are valuable, and I especially like them in a balsamic pork marinade.
The uses of these herbs are very wide. I love the combination of balsam and rosemary – a classic! But thyme works too. If you prefer sage, I recommend checking out my Slow Roasted Pork Loin Recipewhich uses a Dijon sage marinade.

The gluten-free flavor combination of balsamic and rosemary works well with any type of pork — tenderloin, boneless pork loin, even ribs.
The difference really depends on the cooking time. If you're grilling or roasting boneless pork loin, you'll need to do it at lower heat for a longer time. This will ensure that the garlic in the marinade does not burn too much. Pork tenderloin is better when cooked over high heat for about 20 minutes.
I've included cooking instructions below for baking and grilling with this marinade, using any type of pork.
