This clams and sausage recipe is a quick, complete weeknight meal thanks to the addition of potatoes and kale. All in one pot and packed with Spanish smoky flavor thanks to sausage and white wine. Perfect with crusty bread (or more potatoes!).

This Clams with Sausage recipe is no exception, though I used my own creative twist to turn a simple white wine-infused Spanish clam dish into an all-inclusive one-pot meal that's ready in just 30 minutes!

Both jowls and cherry pits are larger, but you can use something smaller in this recipe and adjust the cooking time as needed. Small clams like cockles are more authentic in Spanish cuisine, but are hard to find in my neck of the woods.

As I mentioned in my article Sustainable Seafood Guide, Clams and mussels are one of the world’s cheapest, most bioavailable, and most nutritious sources of animal protein. Although they are technically farmed, these “filter-feeding” bivalves actually improve the waters into which they are introduced, unlike farm-raised fish, which require more resources (feed, water , energy) to carry out industrial-scale breeding.
When it comes to the health benefits of clams, you can’t get much better than this. These little cuties are packed with good fats, iron, zinc and selenium (Very important for thyroid health, my bridge team! Clams are a super easy weeknight dinner when it comes to your time.
The clams might be less controversial if you pour heavy cream into the pan, but there are ways to get around that in this clams and sausage recipe — even this one Dairy-Free Clam Chowder !
How to Make Clams with Sausage
This recipe comes together in just over 30 minutes in one pan It can even be done in less time if you chop the potatoes as finely as possible or omit them altogether. But part of the reason for the short cooking time is that both clams and sausage have a lot of built-in flavor. Be sure to get the Spanish hard-cured sausage, which has been seasoned with smoked paprika and paprika.
Sausage, kale, tomatoes, and potatoes are one of my favorite late-summer combinations (Portuguese kale soup is another example). When the weather starts to cool down in the evenings, there's nothing better than a bowl of broth, hearty summer vegetables and seafood.
this Fresh savory clams and smoked sausage make for an incredibly flavorful stock No need for you to slog in a saucepan all day. The addition of starch and vegetables (and maybe a little crusty bread on the side for the epicureans) makes this a perfectly balanced one-pot meal.

Easy Spanish Clams with Sausage


portion size 2
raw material
- 2 pound Smallneck clams (you can use Manila clams or cockles for smaller options)
- 1 spoon olive oil
- 4 ounce Spanish sausage, diced (You want hard cured sausage, not fresh)
- 2 scallions, thinly sliced
- 3/4 pound Yukon gold baby potatoes, cut into 1/2-inch pieces
- 2 clove garlic, minced
- 1 pint cherry tomatoes, halved
- 1/2 teaspoon sea salt
- 2 cup chopped kale leaves
- 1/2 cup Liquor

Rinse clams and place in large mixing bowl. Cover with cold water and soak while you prepare remaining ingredients.

In a large Dutch oven or skillet with a lid, heat the oil. Sauté chorizo, shallots, and potatoes over medium-high heat, stirring occasionally, until potatoes are browned and shallots are soft, 7 minutes. Don't worry if brown bits form on the bottom of the pan. Add garlic and cook for another minute. Stir in tomatoes and cook for 5 minutes, until they begin to release their juices. Pour in the wine, scrape up any brown bits from the bottom of the pan, and season with salt. Cook for 2 minutes, until half of the wine has cooked away. Reduce heat to low and cook for another 2 minutes, until potatoes are al dente (depending on size).

Stir in the kale and place the clams on top. Bring remaining liquid to a boil over medium heat, cover and steam for 5 minutes, or until clams open.

Serve the Spanish clams and chorizo immediately with crusty bread (gluten-free or otherwise! You make yours).
