I absolutely love fresh melon, especially in the summer, and often use it in my recipes watermelon salad and watermelon juice. However, one of my favorite ways to change it up is with this Melon and Ham Salad!
Sweet, salty, tangy, creamy and delicious, it just screams summer. There are so many things happening in such a good way! The vibrant mint really makes the flavor pop, and the homemade dressing ties the whole thing together.
Made with simple ingredients and ready to serve in minutes, this recipe is the perfect appetizer for any summer party. Or, enjoy it as a light meal side Or two. No matter what, it's sure to leave you feeling fulfilled and satisfied!

Be sure to wash the melons before you start cutting them! Although we don't eat the peels, they can contain harmful bacteria that can cling to the knife and transfer to the flesh when cutting.
