Fruit leather consists of fruit puree that is dried to a chewy consistency. Many fruit leather recipes have added sugar or honey (many store-bought versions have added corn syrup, fruit juice, pectin, or artificial colors), but you can easily make homemade fruit wraps without all of these ingredients.

How to Make Fruit Leather in the Oven

Yes, you can make fruit leather from frozen fruit! Simply thaw the fruit completely in the refrigerator and drain off any excess liquid before pureeing.

Make your fruit leather a success with these simple tips.

  • Use the correct pot liner. Parchment paper or silicone pads work best. Avoid using waxed paper or plastic wrap that is not oven-friendly, or foil that will stick.
  • For a better texture, strain the seeds if desired. If using berries or other fruits with edible seeds, you can strain them through a fine mesh sieve before transferring to a baking sheet.
  • Apply evenly. Shake the pan to distribute the puree evenly on the pan. If the fruit is not evenly spread out, the fruit roll recipe will have a lumpy texture and the thinner part may burn before the thicker part is done. Try to create the thinnest possible layer without punching any holes.
  • Pay attention to ripeness. Over-dried peels will become brittle and prone to cracking, so continue testing for doneness after 3 hours.
  • Fruit too sour? Add sweetener. If you use out-of-season or particularly tart fruit, add sweetener.honey, maple syrup or powder sugar-free sweetener All are good choices.
  • Boil the puree to save time. If you want to reduce oven time, you can cook the fruit on the stove first. Once pureed, boil for 5-10 minutes to allow some of the liquid to evaporate. This step can roughly cut your baking time in half.
