what do you need

Dig through your pantry for a long-forgotten packet of ranch dressing. You may have one! Check the recipe card at the bottom of the post for exact quantities.

  • Yukon baby potatoes – Use your favorite baby potatoes.
  • garlic – Please do not use garlic powder.
  • Olive oil – Avocado, corn, canola and vegetable oils are also effective.
  • Ranch Seasoning – This is a powder. Don’t swap it out for ranch dressing.
  • Salt – Kosher or Himalayan salt works.
  • coriander – Chopped chives are another great choice for garnish.

What potatoes are best for baking potatoes?

I like roasted Yukon baby potatoes, but fingerlings are also good. The baby red fu potatoes are also great. All of these potatoes handle the heat well without falling apart or becoming too mushy.

Whichever type you choose, make sure they are a baby breed. Regular potatoes can also be roasted but will take longer to cook, this recipe is specifically for baby potatoes.

Recipe Tips and Variations

These tips and variations will help you turn any baked potato recipe into the best you’ve ever tasted:

  • prepare in advance. Add the potatoes to the mixture and refrigerate until just before dinner. Let them sit at room temperature for 15 minutes while preparing the rest of the meal. Then place them in the oven to ensure they cook evenly.
  • Make mashed potatoes. Turn leftovers into mashed potatoes to pair with your favorite dishes.
  • Dry them. If you washed the potatoes before starting, be sure to pat them dry with a clean kitchen towel first. Any excess moisture will prevent the skin from becoming crispy.
  • Spread them. Spread the potatoes out in a baking dish, giving them enough room to crisp up properly. Wrapping them tightly allows them to steam next to each other and keeps their outsides soft. If desired, bake them in two baking pans.
  • Avoid using silicone pads. I don’t recommend lining a baking sheet with a silicone baking mat because the ranch dressing can slip into the tiny cavities and leave a weird aftertaste in future baked goods. If you want an alternative that’s easy to clean up, use foil instead.
  • Add bacon. Cooking and crumbling 1-3 bacon strips makes a great garnish for these potatoes. Give it a try!

How to store and reheat leftovers

Once completely cooled, refrigerate leftovers in an airtight container for up to 5 days. When leaving them on the counter to reheat or eat, keep them away from direct heat and sunlight. To reheat, poke holes in the potatoes with a fork and sprinkle with a teaspoon of water. Microwave for 1-2 minutes or until hot. You can also heat them in the oven at 400 degrees Fahrenheit for 10-15 minutes.
