How to Make Grilled Chicken with Raspberry JalapeƱo BBQ

  • Prepare the grill. Preheat it to 375-400F. Grease grates with cooking spray.
  • Season. Pat chicken dry with paper towels. Season each side with salt and pepper.
  • Bake it. Place chicken on grill and cook for 4 minutes. Flip and cook for another 3 minutes.
  • Add sauce. Brush with barbecue sauce and cook for 1-2 minutes more. Flip it over, brush with more sauce and cook for another 1-2 minutes.
  • Serve. Remove from heat. Let cool for 4 minutes. Brush with more sauce to taste. Serve and enjoy!

  • Make bowls. Top mine with BBQ chicken Chicken Burrito Bowl. You can also make your own bowl with rice, black beans, grilled corn, and diced avocado.
  • Use the stove. Place skillet over medium-high heat and add 1/2 tablespoon vegetable oil. Cook the chicken as normal until no longer pink in the center.
  • Marinate it. Place chicken in a large Ziploc bag. Add 1 cup orange juice, 1/2 cup water, 1 tablespoon fresh cilantro, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon salt. Seal bag and shake well. Refrigerate 30 minutes or overnight for more flavor.
  • Exchange protein. Using turkey breast instead of chicken is an easy variation of this recipe.
  • Tear it up. Using two forks, gently pull the chicken in opposite directions until it is completely shredded. Turn it into tacos or quesadillas to use up the leftovers.

How to store and reheat leftovers

I like to freeze it in portions so itā€™s easier to defrost throughout the month.

  • refrigerator: Store in an airtight container for up to 3 days. If it tastes sour or bitter, discard immediately.
  • refrigerator: Spread chicken on a baking sheet and freeze for 1 hour. Transfer to freezer bags and freeze for up to 3 months. Thaw in the refrigerator overnight.
  • To reheat: Sprinkle with 1/4 teaspoon water and microwave in 20 second increments. You can also heat it in a saucepan (covered) over medium heat for 7-8 minutes.

  1. Heat grill to medium-high heat, about 3750-400Ā°F.
  2. Pat chicken breasts dry with paper towels.
  3. Season both sides with salt and pepper.
  4. Place the chicken breasts directly on the grill and grill for 4 minutes. Flip and grill the other side for 3 minutes.
  5. Then brush them with Raspberry JalapeƱo BBQ Sauce. Turn off grill and cook for 1-2 minutes.
  6. Turn chicken over and brush other side with raspberry chipotle BBQ sauce. Cook 1 minute or until internal temperature reaches 165Ā°F.
  7. Remove from grill and let rest for 5 minutes. Top with additional sauce if desired.
