- Boneless Pork Chops – Make sure to get thick cut pork chops so you can easily slice them for filling. Grilled pork chops with stuffing, this recipe uses boneless meat. Learn more about choosing pork chops in my post on grilled and grilled pork chops.
- mushroom – I use mine Sautéed Mushrooms Recipe For added flavor, but any canned or cooked sliced mushrooms (such as Oven Baked Mushrooms) will work. Canning is a shortcut that doesn’t require cooking, but in my opinion tastes worse than freshly cooked mushrooms. Lisa’s recipe calls for 5 or 6 ounces of ribs, but mine is bigger (8 ounces), so I increased the amount of mushrooms in my filling from 1/3 cup to 1/2 cup. If you used short ribs, you may have leftover filling.
- swiss cheese – You can use pre-sliced or shredded cheese. If using slices, chop them up for easier mixing into the filling.If you are not Swiss, other type of cheese will also work.
- coriander – With such a simple ingredient list, fresh parsley (vs. dried) tastes the best.
- olive oil – For browning roasted stuffed pork on the stove top. I use extra virgin olive oil, but any neutral cooking oil you like will do. Avoid butter, it will burn too much.
- sea salt and black pepper – Convenient for seasoning on meat. Kosher salt can also be substituted for sea salt. If using regular mushrooms in place of my sautéed mushrooms recipe, you will need to add 1/4 tsp more salt to the filling.
- toothpick – These will help keep the filling inside the ribs during cooking.
Variation: Use bone-in vs boneless chops.
Boneless ribs are easier to serve and take less cooking time, but bone-in ribs are tastier. Choose the one that suits you best!

How to Cook Stuffed Pork Chops in the Oven
This section shows how to bake stuffed pork chops, with step-by-step photos and details about the technique. See the recipe card below for full instructions.
- piece. Use a sharp knife to cut a pocket on the fat side of each pork chop, fanning out from the center. Be careful not to cut the other side.
- Make the filling mixture. Toss cooked mushrooms, cheese, and parsley in a bowl.


- Stuff the pork chops. Stuff stuff into the ribs.Secure with toothpicks and place in a small casserole (or a rimmed pan).
- bake. Cook the stuffed pork chops in the oven until they are no longer pink. Gently remove the toothpick.
Tip: Cook until the internal temperature reaches 140 degrees F, slightly cooked.
During the last step, the internal temperature will rise even more, so do not cook until fully cooked (145 degrees F) in the oven.


- Brown. in a hot oil cast iron pan until it sparkles. Fry the stuffed pork chops on each side until golden brown.

How Long to Cook Stuffed Pork Chops?
Cooking time for stuffed pork chops will take about 15-20 minutes in a 350°F oven, depending on the thickness of the pork chops. To brown the outside and juicy inside, cook the ribs in the oven until the internal temperature reaches 140F, then fry for 30-60 seconds per side until the internal temperature reaches 145F.always use meat thermometer Check for completion.
Stuffed Pork Chops Recipe Variations
There are so many ways to vary the filling in this recipe! Try these simple swaps.
- use a different cheese – Try using Parmesan, cream cheese, feta or mozzarella instead of Swiss cheese.
- try other vegetables – instead of chopped spinach or other green leafy vegetables, sun dried tomatoes, Caramelized Onions, roasted red peppers, roasted garlicor use celery instead of mushrooms.
- Add spices – mix poultry seasoningonion powder or paprika (to taste) into the filling.
- use other herbs – Thyme or rosemary work well in this recipe.
- make it meaty – Add brown sausage (a 5-6 oz sausage, broken into pieces) or cooked bacon Replace mushrooms with stuffing.
Storage Instructions
- Shop: Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Meal preparation: Prepare the stuffing and pork chop stuffing. Wrap uncooked ribs tightly and store in a freezer-safe container for up to 3 months. Thaw overnight before cooking as directed.
- Reheat: Heat ribs in a 350°F oven or microwave on low power until heated through.
