Yes, you can definitely make zucchini in the oven – and it’s delicious!The method is very similar to cooking any other kind of food roasted vegetables.

- zucchini – This roasted zucchini recipe calls for 2 pounds of zucchini. You can also do the same with yellow squash, Pie with Pumpkinor a combination.
- olive oil – Adds flavor and helps brown the zucchini. Avocado oil can also be used.
- Italian seasoning – The oven roasted zucchini recipe calls for Italian seasoning.I do it myself Italian seasoning, but the store also bought the pieces.You can also use indian seasoninglemon pepper to taste, even Taco Seasoning. Another option is to chop up some fresh herbs – this recipe uses 1/2 to 1 tablespoon. (Honestly, plain salt and pepper is also delicious.)
- garlic powder – Powder works best as fresh garlic will burn in the heat of the oven. Granulated garlic, like garlic powder, but coarser, will work too, but you’ll need a little more.
- salt and pepper – All my recipes use sea salt, but kosher salt will work too.
Variation: Add Parmesan cheese!

How to Roast Zucchini in the Oven

- Cut the zucchini into spears. Simply cut off the ends of the zucchini, then cut each zucchini in half to make 2 shorter cylindrical sections. Cut each piece lengthwise 4 times, taking 8 sticks from each larger piece. See the visuals below.
- Zucchini season. In a large bowl, toss zucchini strips with olive oil and season with Italian seasoning, garlic powder, sea salt, and black pepper. Throw it on the coat.


- arrange. Arrange the zucchini strips on the baking sheet in a single layer, leaving space between them. (If desired, you can line the pan with aluminum foil or parchment paper. If using foil or an unlined pan, cooking spray is recommended.)
- Roasted Zucchini in the Oven. Roast until tender, flipping halfway through. I like to sprinkle with fresh parsley.

How long does it take to bake zucchini at 400 degrees?
Roasting zucchini spears in the oven takes approx. 15-20 minutes at 400°F, flip halfway through for best results. Cook a few minutes less if you like it a little more crispy and tender. If you like it a little softer, cook for a few more minutes! The time to roast the zucchini also depends on the thickness of the spears, so keep an eye on them.
How to roast zucchini without getting soggy?
Because of their high water content, the key to a perfectly grilled zucchini is high heat. Bake at 400 degrees Fahrenheit, do not bake for too long. Baking time will vary depending on the size and shape of the zucchini chunks, so check occasionally.
Tip: Toast your zucchini at the end to brown your squash even more.
This will give it a golden brown color without making it soggy.
Can you make roasted zucchini slices?
Of course, you can also grill zucchini! Just slice the zucchini into 1/4-inch slices instead of spears and follow the same instructions.
IMPORTANT: Slices actually bake faster than spears.
Flip them after 5 minutes and they will be done in about 10 minutes or soon after.
Oh, if you like roasted zucchini rounds, you might as well make them Zucchini Pizza!

Storage Instructions
Store any leftover oven-roasted zucchini slices or spears in an airtight container in the refrigerator for 2-3 days.
However, since this roasted zucchini recipe takes only 15-20 minutes to bake, I recommend roasting it fresh for best results. You can chop the zucchini ahead of time if you want to prepare meals.
Can you freeze oven roasted zucchini?
Yes, you can freeze roasted zucchini. Freeze in a single layer on a parchment-lined baking sheet, then freeze solids and transfer to freezer bags.
IMPORTANT: Slices actually bake faster than spears.
Flip them after 5 minutes and they will be done in about 10 minutes or soon after.
Reheat Instructions:
Reheat the roasted zucchini in a 350°F oven or microwave until heated through. It might be a little mushy than the original – but it’s still delicious if you ask me!
