Ingredients and Substitutes

This section explains how to choose the best ingredients for this basic kale chips recipe, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.

  • kale – This kale chips recipe calls for a pound, which is about an average bunch of kale. I prefer rolled kale because it holds more seasoning and also means a crunchier texture. You can also use lacinato kale (aka dinosaur kale or Tuscan kale) — it’s sweeter, thinner, and crunchier. No matter what variety you use, you will need to cut off the stems. You can see a visual of how to do this in my Air Fryer Kale Chips postal.
  • Oil – I used Extra virgin olive oil, but you can use any neutral cooking oil you like. Avocado oil is another good option.
  • sea salt – Capture your favorite flavors in crispy crisps!

That’s all you need for the plain version, but you can add seasonings too! Check out the “Seasoning Variations” section below for different kale chip recipes. When I took the photo below, I used a combination of ground cumin and paprika.

Tips for the Best Kale Chips

Tips for the Best Kale Chips

  • Dry thoroughly. If there is still some water left on the kale, it won’t get crispy either. For best results, use a salad spinner and pat the leaves dry with paper towels.
  • Do not crowd the pan. Make sure the kale is arranged in a single layer. If it’s too crowded, it won’t be crispy. Cook in batches if the largest pan won’t fit.
  • Massage thoroughly. Massaging the leaves helps soften the outer cell walls and remove the bitterness. This process makes the flavor of the kale leaves more delicate and even slightly sweet. To massage kale, toss with a little oil, then grab a handful, squeeze, loosen, and repeat until the leaves start to soften.
  • Use less seasoning. They will have a stronger flavor after baking because the chips shrink a bit. For most seasonings, a good rule of thumb is to use 1-2 teaspoons of seasoning per pound of kale (not counting salt and pepper).
  • Let them calm down. The kale chips will be crispier when they cool to room temperature.

How to store kale chips?

Store kale chips in an airtight container or paper bag at room temperature for up to 1 week.

You can also freeze them. Freeze in a single layer on a parchment-lined baking sheet until set, then transfer to a freezer bag. They will keep in the refrigerator for up to 3 months.
