So I was a little surprised myself when I realized I didn’t have it on the site, at least not by itself – it’s time to change that.Introducing…my The best low carb keto pie recipe ever!
I’ve used variations of this keto pie crust in several of my favorite recipes, including low carb cheesecake, Lemon Meringueand Greek Spinach Pie. even mine Keto Pretzels There are similar bases. Each is a slightly different version, but somehow I never shared the original low carb pie crust recipe I use most often – until now.

There are several options for this keto almond flour pie crust recipe. Flour, sweeteners, salt, additives, fats, and even eggs are all customizable, to an extent. It’s handy so you can do it with what you have on hand!
Almond powder
Superfine blanched almond flour is ideal but not absolute must. Coarse almond flour will work but the texture will be grainier.I recommend Wholesome Yum Superfine Bleached Almond Flourit has the best consistency and will produce the best texture in your low carb pie crust.
SWAP: Can you use coconut flour?
If you need to avoid almond flour entirely, I do no Coconut flour is recommended for this recipe – it will be very drying.make Coconut Flour Pie Crust Like This instead.
sweetener
You can make an almond flour pie crust with or without sweetener, so it works well for Low Carb Dessert Recipes and delicious pies.
If you’re wondering which sweeteners to use, any you like will do, but it has to be granulated. (Liquid sweeteners can change the ratio between wet and dry ingredients too much.) Here are my top sweeteners of choice for keto pie crust:
- the best Monk Fruit Allulose Mixture – My top recommendation because it measures like sugar, has 0 calories and net carbs, and has no aftertaste. Best of all, it helps lock in moisture (unlike other sweeteners) for a flaky keto peel that doesn’t dry out.
- Erythritol – I’ve used this the longest, but it’s no longer my first choice. It’s drier than Besti and tastes a little grittier. Since erythritol is less sweet than Besti, you would need to use 33% more to achieve the same sweetness.
- Allulose – Similar to Besti above, but without the monk fruit. The results will be similar, but you have to use 33% more, just like erythritol.
For those who prefer a stricter paleo pie crust, coconut candy Just the opposite.
Even for sweets, I vary the amount of sweetener in the crust depending on how sweet the filling is. If your filling is very sweet, adding 2-3 tablespoons of sweetener to the crust may be enough. On the other hand, if it’s more tart, you may need to use up to 1/2 cup of sweetener. It will also vary depending on your sweet tooth. Most of the time, 1/4 cup will be a good middle amount (if using Besti), so that’s what I put in the recipe.
Salt
Even with a sweet crust, salt helps balance and bring out the sweetness, so don’t ignore it. All of my recipes use sea salt, but any will work.
For a delicious gluten-free pie crust with almond flour, omit the sweetener and double the amount of salt, as noted on the recipe card below.
fat
Fat is important for a person keto diet, and is also important in any type of baking. The fat in this almond flour pie crust recipe adds flavor, prevents drying, ensures the correct ratio of wet/dry ingredients, achieves browning, and aids in heat movement throughout the crust during baking.
You have 3 options here:
- butter – If you’re dairy-insensitive, almond flour pie crust with butter is the most accessible and delicious option. This is the one I use most often.
- butter – Provides a rich buttery flavor, but still fits most People want dairy free because lactose is removed.
- coconut oil – If you prefer to avoid dairy altogether (even ghee is a problem), coconut oil is an easy substitute. It does impart a mild coconut flavor, though.If you want to keep the buttery taste, try Butter Flavored Coconut Oil – It’s amazing and still dairy free.
Egg
Eggs provide structure so the shell doesn’t fall apart and are part of the correct wet/dry ratio.
For those allergic to eggs, you can replace eggs with one of the following options:
- more butter – To make an eggless almond flour pie crust recipe, simply increase the amount of butter (or fat of your choice) by an additional 2 tablespoons. The crust will be a bit crispier, but still taste great.
- flax eggs -I’ve heard of people using flax eggs instead, but haven’t tried it in a pie crust.
vanilla extract (optional)
This is optional but highly recommended for sweet pie crusts.

How to Make Almond Flour Crust
This section describes how to make a keto pie crust with almond flour, with step-by-step photos and details about the technique to help you visualize it.For complete instructions, including quantities and temperatures, see Recipe card below.
- Mix dry ingredients. In a large bowl combine almond flour, besti (if using) and sea salt.
- Add wet ingredients. Add the melted butter (mix with vanilla, if using) and eggs to a bowl and whisk until fully combined. The dough will be crispy.


Tip: Use a food processor for faster preparation.
It’s a little more cleanup, but easier to mix the ingredients well. Plus, it’s less fuss: you basically dump everything in a food processor and spin it all together.
If you’re making it by hand, you’ll have to make sure the dry ingredients are mixed first, then continue pressing and mixing the dough after adding the wet ingredients.
- according to. Transfer dough to a greased or lined pie pan and press in, fluted edges if desired. Poke holes in the surface to prevent blistering.
- bake. Cook until golden brown. Cool for at least 10-15 minutes before adding any fillings.


Almond Flour Pie Crust Insert
Most of the time, an almond flour pie crust doesn’t need to add much to make it great—it’s a buttery, flaky base that makes your filling the star. But if you want to add a little flavor to the crust itself, you can:
- Salty: Put some spices in it. (If you do, stir them with the dry ingredients first.) garlic powder or Italian seasoning is common and works well.
- Sweet: Cinnamon can be added nicely.or even more unique things like Maple Extractcan taste amazing.
Storage Instructions
You can easily make an almond flour pie crust ahead of time. You have 3 options:
- Make the almond flour pie dough ahead of time. Wrap in plastic and store in balls in the refrigerator or freezer.
- Press the almond cookie crust into the pan. You can store the raw crust in a pie pan in the refrigerator.
- Pre-baked crust. Since this almond crust recipe is best pre-baked, you might as well make it ahead of time. Then, cover and store in the refrigerator, although on the counter after a day or so of baking is fine.
Can you freeze almond flour pie crust?
Yes, the almond flour pie crust can be frozen. You can freeze a ball of dough, a raw crust pressed into a pan, or a pre-baked crust.
Whether this keto pie crust with filling can be frozen depends on the specific filling, so I recommend referring to the recipe for specific storage instructions when filling. Like any crust, it can get soggy after thawing with certain fillings.
To thaw the crust, just keep it on the counter, or in the refrigerator overnight.

Preheat oven to 350°F (177°C).underline the bottom of a 9″ (23 cm) round pie pan and parchmentor well lubricated.

In a large bowl, combine almond flour, besti (if using), and sea salt.

Add melted butter and eggs and mix well. (If using vanilla, stir it into the melted butter before adding the dry ingredients.) The “dough” will be dry and crumbly. Continue whisking, pressing and beating until smooth and free of almond flour powder. (Alternatively, you can use a food processor to blend them together.)

Press the dough into the bottom of the prepared pan. You can groove the edge you want; if it crashes while doing so, just press it back. Use a fork to carefully poke holes in the surface to prevent foaming.

bake 6-12 minutesuntil slightly golden around the edges – time may vary depending on your pan, oven, and the sweetener you use (or not).
Add the filling only after pre-baking. If your filling needs to be re-bake, you will want to bake the crust on a shorter time frame, about 6-8 minutes, and use a pie shield or foil to cover the edges while re-baking the filling.

Notes on sweeteners: The optimal amount of sweetener will vary by filling. Use 1/4 cup sweet crust, 3 tablespoons very light sweet crust (if your filling is super sweet), up to 1/2 cup very sweet crust (if you prefer sweeter crust or your filling is sour) ), or omit the sweetener for a delicious crust.
