I grew up in a Russian-speaking family, and I didn’t get to taste all-American macaroni and cheese until much later. I still remember tasting it for the first time and not knowing (or caring!) how it was processed. I didn’t even think about the carbs in macaroni and cheese. As I moved to a low carb lifestyle, I missed this dish so much and came up with this keto macaroni and cheese version to meet that need.

What is Cauliflower Mac N Cheese?

Keto Cauliflower Macaroni and Cheese tastes just like all the cheesy macaroni and cheese but uses cauliflower florets in place of the macaroni and the same type of rich cheese sauce as the original. Even if you’re a die-hard pasta lover, I think you’ll love the taste of this dish. Roasted cauliflower is a great alternative to macaroni on a keto diet—hence the name.its delicious as Keto Side Dish Or a vegetarian keto entree.

  • cauliflower – Fresh cauliflower works best for this recipe, but you can also use frozen cauliflower and increase the cooking time when roasting. Make sure the florets are very small – more pieces in each bite help make this tomato mac and cheese more reminiscent of the real thing.
  • olive oil – For roasted cauliflower. Avocados work great too. In earlier versions of this recipe (including the YouTube video), I just used melted butter (also used in the cheese sauce) to reduce the total number of ingredients. Feel free to do this if you want. Baking with butter is generally not recommended due to the high heat, but I found it works well for small cauliflower florets.
  • salt and pepper

For the cheese sauce:

  • Shredded Cheddar Cheese – you can replace this cheese with any ketchup You prefer easy-to-melt ones, such as Gruyere, Gouda or mozzarella. Hard cheeses, like Parmesan, won’t make a smooth sauce.
  • heavy cream – Makes a rich and smooth sauce. Some people also add cream cheese to the sauce, but I don’t think it’s necessary and it doesn’t taste as authentic that way.
  • Unsweetened Almond Milk – You can also use a coconut milk drink from the carton or a heavier cream for a nut-free version.
  • butter – for the taste. Use unsalted.

If you want tomato macaroni and cheese with breadcrumbs, you’ll also need to crush pig skin. After the last step transfer the mixture to a baking sheet, sprinkle with chopped pork rind and bake for a few minutes until golden brown.

How to Make Cauliflower Macaroni and Cheese

This section describes how to make tomato macaroni and cheese with cauliflower, including step-by-step photos and details about the technique. See the recipe card below for full instructions.

  1. season. Toss the cauliflower florets with oil, salt, and pepper.
  2. bake. Transfer to a baking sheet. Roast the cauliflower until the edges are tender and browned. (I highly recommend roasting for the best flavor, but you can also steam or simmer the cauliflower in a large pot; drain well.)

For more complex flavors, add spices like garlic powder, onion powder, smoked paprika, or your favorite spice blend. You can also add the seasoning directly to the cheese sauce.

  1. Make the sauce. In a saucepan over low heat whisk cheese, cream, almond milk, and butter, stirring frequently, until smooth. (Alternatively, you can simply microwave the ingredients until the cheese is melted, then stir until smooth.) Be careful not to overheat.

However, if you find the sauce is not thick enough, you can simply add more shredded cheese to the sauce before tossing it with the cauliflower. If it’s too thick, you can thin it with more almond milk or cream.

  1. combine. Transfer the cooked cauliflower to a large bowl. Pour cheese sauce on top and fold gently to spread evenly. For extra crunch (optional), try the pork rind variation from the ingredient list above.
  2. decorate. I like freshly ground black pepper, but a sprinkling of fresh parsley – or nothing – is fine too.

Storage Instructions

  • Shop: Store leftovers in the refrigerator in an airtight container for up to 4 days.
  • Meal preparation: To roast cauliflower and make cheese sauce, store separately. Reheat cauliflower in the microwave or 350°F oven before serving. Gently reheat the sauce on the microwave or stovetop and toss with the cauliflower.
  • Reheat: Reheat in microwave or 350°F oven until warm.
  • freeze: Freezing isn’t ideal, but it can be done. Cool completely, wrap tightly, and freeze for up to 3 months. Thaw in the refrigerator and reheat in the oven. The sauce may separate, so stir well afterwards.
