How to Make Keto Chicken Soup

  1. Fried vegetables. in a big dutch oven or pot, heat the olive oil over medium heat. Add carrots, celery and onions and sauté until onions are translucent.
  2. Bring soup to boil. Add chicken, chicken stock, Italian seasoning and bay leaf. Increase the heat and bring to a boil, then reduce the heat, cover and simmer.

(Don't overcook it without any resistance or the noodles will become mushy.)

  4. When the spaghetti squash is cooked and cool enough to handle, cut it in half and scoop out the shreds with a fork (pull the fork in the same direction as the shreds, crosswise across the short sides of the spaghetti squash).

  5. Remove bay leaves. Add half the spaghetti, or about 3 cups spaghetti, and stir. Add salt and pepper to taste.
