Ingredients and Substitutions

- olive oil – For sautéing vegetables. If you don't turn the heat up too high, you can use avocado oil or cream.
- vegetable – A classic chicken soup combo calls for carrots, celery and onions. You can add other veggies like peas (low carb, but not keto), zucchini, bell peppers, or cauliflower florets.
- chicken – You can cook raw chicken breasts or boneless chicken thighs directly in keto chicken broth.If you have leftover pre-cooked Add shredded chicken to Instant Pot or Grilled Chicken Breast, these work great too.Season the chicken poultry seasoning For more flavor!If you have more leftover chicken, you can use that Chicken Nachos or Low Carb Chicken Salad.

- bay leaf – Gives low-carb chicken soup a richer flavor.

How to Make Keto Chicken Soup

- Fried vegetables. in a big dutch oven or pot, heat the olive oil over medium heat. Add carrots, celery and onions and sauté until onions are translucent.
- Bring soup to boil. Add chicken, chicken stock, Italian seasoning and bay leaf. Increase the heat and bring to a boil, then reduce the heat, cover and simmer.
Tip: If using raw chicken, shred the chicken once it's tender.
Remove the cooked chicken from the pot, shred it, and return it to the pot to continue cooking.


- Roast pumpkin. While the soup is boiling, preheat the oven and poke holes in the spaghetti squash.place it in Baking pan Bake until a knife can easily pierce the skin with just a little resistance. When the spaghetti squash is cooked and cool enough to handle, cut it in half and scoop out shreds with a fork.
Tip: Don’t overcook the squash.
Don't overcook it without any resistance or the noodles will become mushy.

Storage instructions

Meanwhile, preheat oven to 375 degrees F (191 degrees C). Use a sharp knife to poke holes in the spaghetti squash.Place in Baking pan and bake 40-60 minutes, until the fork can easily pierce the skin with minimal resistance. (Don't overcook it without any resistance or the noodles will become mushy.)

When the spaghetti squash is cooked and cool enough to handle, cut it in half and scoop out the shreds with a fork (pull the fork in the same direction as the shreds, crosswise across the short sides of the spaghetti squash).

Remove bay leaves. Add half the spaghetti, or about 3 cups spaghetti, and stir. Add salt and pepper to taste.
