The filling for this low carb lemon meringue pie is my modified version Keto Lemon Curd Recipebut made thicker to fit the pie filling:

  • yolk – The key ingredient in lemon curds, they make it thick and creamy. Use large eggs, reserving the whites for the meringue (below).
  • Original Gelatin Powder – Gelatin is a natural thickening agent.
  • hot water – Bloom Gelatin.
  • Xanthan Gum – Another ingredient that helps thicken the filling.
  • lemon – You need lemon juice and lemon zest. However, you will need the zest of about 3 lemons and the juice of about 4-6 lemons, so you can just take 3 and make up the remaining juice with bottled juice if you want.
  • Besti Luo Han Guo Powder Allulose Blend – like mine Sugar Free Lemon Curd, I only recommend Besti here because unlike other sweeteners (including erythritol and other brands of monk fruit sweeteners), Besti dissolves completely and does not crystallize.You can try other powdered sweeteners (see A Guide to Keto Sweeteners for conversions), but most of them crystallize and produce gritty results.
  • sea ​​salt – Balanced sweetness.
  • butter – Adds flavor and also helps thicken. Make sure it’s unsalted.
  • Keto Lemon Curd – The lemon layers of this keto meringue pie are sweet and tart in the best way possible, including egg yolks, powdered gelatin, xanthan gum, lemon juice and zest, butter, and sweetener.

Meringue:

  • protein – Take the egg whites from the lemon curd above, which utilizes the egg yolks.
  • Besti Luo Han Guo Powder Allulose Blend – The same sweetener used in the above filling. This is my first choice for the same reasons as above.

How to Make Keto Lemon Meringue Pie

This section describes how to make Lemon Meringue Ketone Pie, with step-by-step photos and details on the technique. See the recipe card below for full instructions.

  1. Make the crust. Follow the instructions Almond Flour Pie Crust or Coconut Flour Pie Crust. Toast the crust while you can make the lemon curd layer.
  2. Whisk the egg yolks. Separate the eggs (you’ll need the yolks for the filling and the whites for the meringue.) Whisk the yolks in a small bowl and set aside.
  3. Bloom Gelatin. In a separate bowl, whisk together water, gelatin, and xanthan gum and set aside.

  1. simmer. Combine lemon juice, lemon zest, besti, salt, and egg yolks in a saucepan and heat to a gentle boil.
  2. Add gelatin. Stir in the gelatin mixture, stirring constantly for 2-3 minutes to combine.
  3. Add butter. Add butter and stir until melted. Remove from heat source.
Pour the gelatin mixture into the lemon juice mixture in the saucepan.
Add the butter cubes to the lemon curd mixture.
  1. Pour in and cool. Pour the lemon cream filling into the crust and chill for at least 5-6 hours, or preferably overnight.
  2. Make meringue. Beat egg whites with a whisk electric mixer or stand mixer until stiff peaks form.join in the best And keep mixing on high speed until it’s smooth and smooth.

Storage Instructions

Keep Keto Lemon Meringue Pie in the refrigerator for 2-3 days. Freezing pies is not recommended as the freezing and thawing process can alter the texture of the meringue.

  3. Place a small piece of meringue on top of the lemon filling. Smooth the top and swirl with the back of a spoon.

  4. Put the Keto Lemon Meringue Pie under the broiler 2-3 minutes, until the meringue is golden brown.Alternatively, for a perfect brown edge, you can use blowtorch.

  5. Keep refrigerated until ready to serve. Serve cold.
