How to make protein cookies

  • Mix the dry ingredients. Whisk the protein powder, sweetener, and salt in a large bowl.

  • Add wet ingredients. Whisk the eggs on the side of the bowl to mix the yolk and egg whites, then mix them with the dry ingredients thoroughly. Add peanut butter and vanilla and stir until smooth.

  • Add chocolate chips. Fold into dough until combined.

There is nothing easier than this simple protein cookie recipe! But if you want the best protein biscuits, here are some tips to solve them:

  • Mix by hand or in a food processor. The instructions above show how to make it by hand, but you can also use a food processor in each mixing step. Make sure you fold the chocolate chips by hand at the end.
  • Press the dough into the biscuit spoon. Of course you don’t have to use a cookie scoop, but I prefer to use it to save time and make the cookies evenly sized. This is what i use. If you do use a cookie scoop, make sure to press the dough into it before releasing. Otherwise, when you put it on the baking tray, it will shatter. If you don’t use a cookie scoop, just press the dough into a ball and flatten it on a baking sheet.
  • Make your protein biscuits the same size. The uniform size and thickness will allow them to bake evenly so that you don’t burn without others even finishing it.
  • Mix the fillings. These simple protein biscuits provide unlimited possibilities for plugins! One of my favorite plug-ins is crunchy nuts, such as walnuts or even peanuts to complement peanut butter. But really, anything with peanut butter and chocolate will be delicious.
  • If necessary, rotate during baking. For some ovens, if you notice uneven baking of the biscuits, rotating the pan to half may also help.
  • Cool down before processing. Like many low-carb cookie recipes, these cookies are best when cooled. This helps them to be strong, so they don’t fall apart. They are worth the wait!
  • Experiment with bone broth protein. Storage instructions
