What is kofta?
Kofta (or kefta) are meatballs or patties, usually made with minced meat (beef, lamb or chicken), fresh herbs, spices and spices. It originated in Persia, but is common today in the Middle East and the Mediterranean.

- minced lamb – The star of this dish! If you don’t have lamb, you can use other ground meats, such as ground beef, ground turkey, or ground chicken, in place of this easy kofta recipe.
- onion – I recommend using yellow onions as they have a sweet and mild flavor that complements the lamb without overpowering it, but you can use white onions. Shred it finely using a box grater.
- garlic – Fresh garlic tastes best here, but you can use 1 tsp canned garlic For convenience.
- fresh herbs – I used fresh parsley and fresh dill, but fresh mint would be a great addition too.
- Cumin – Adds a unique warmth and rich flavor to your kofta kebabs. You can also try other classic spices like paprika, coriander, allspice, cinnamon or cardamom.
- sea salt and black pepper
How to Make Kofta

- Prepare. Soak 8 bamboo skewers In the water. (This keeps them from catching fire on the grill.) Pat dry.
- Mix seasonings. In a large bowl, stir together the grated onion, minced garlic, chopped herbs, cumin, salt, and pepper.
- Add the meat. Add the ground lamb and stir until fully combined. Do not over mix.


Variation: Use a food processor!
You can blend all the ingredients in a food processor if you like. I prefer to do it by hand as it requires less cleanup!
- gather. Divide ground meat mixture into 16 portions. Mold each section around bamboo skewers. Place 2 pieces of meat on each skewer, about 1-2 inches apart.
- Grill. Preheat the grill (or bakeware on the stove) over medium-high heat and oil the grates. Cook the skewers on the grill for a few minutes, until browned on the bottom. Flip and cook until the kebabs are to your desired doneness. (See recommended times on the recipe card below.)


storage instructions
- shop: Cool the kofta kebab to room temperature, then store in an airtight container in the refrigerator for up to 4 days.
- Meal Prep: Prepare the lamb mixture, skewer the meat, and place the skewers on a plate. Wrap the dish tightly in plastic wrap or foil and store in the refrigerator for 1-2 days.
- Reheat: Heat this kofta recipe in the oven at 350 degrees Fahrenheit, or reheat the kofta on the grill over indirect heat.
- freeze: Cool completely, wrap in plastic wrap, and store kebabs in freezer bags. They can be kept in the refrigerator for up to 4 months. Thaw in the refrigerator before reheating.
