I am a big fan of homemade dressings. This is easy, affordable, and another great way to reduce household waste. In summer, I like light citrus seasoning. This lemon dijon balsamic vinegar is my personal favorite. I have been making this for years and can be used on everything from salads to roasted vegetables and potatoes. You can make a large batch and keep it in the refrigerator, or just prepare enough for anything you make. It takes less than 5 minutes and is delicious. Lemon Dijon Balsamic Vinegar Recipe
- 3 tablespoons Avocado oil
- 2 tbsp Walnut oil
- 1 tbsp White balsamic vinegar
- 1 tablespoon Dijon mustard (I like this)
- 1 lemon
- Salt and pepper
Combine the oil, vinegar, mustard, and lemon juice and stir or shake until combined. Season with salt and pepper and enjoy! Some recipes indicate that I use whatever vinegar I have on hand, sometimes rice wine vinegar or white wine vinegar. If you don’t have walnut oil, avocado oil is good (olive oil is fine too, but it has a more unique flavor than avocado oil and will change the flavor of the seasoning).
