But I have to say I think this baked potato might just be my all-time favorite. And these Herb Roasted Lemon Potatoes are one reason!
This baked potato recipe is made with fresh garlic, olive oil, lemon juice, some herbs and seasonings, and sliced Yukon Gold potatoes. The result is tender, delicious, golden browned potatoes that are crisp and smooth.

These Lemon Potatoes only need a few simple and fresh ingredients!
- garlic: You need 6 cloves of minced garlic! In my opinion, the more the better!
- Lemon Juice: I highly recommend using freshly squeezed lemon juice. This recipe uses 3 or 4 lemons, depending on size.
- Oil: you can use it Coat with avocado oil or olive oil before roasting.
- Herbs: I used a combination of dried oregano and fresh parsley, but feel free to use any herbs you like.
- Fine sea salt and black pepper: I keep it simple with salt and pepper, but any real seasoning will do! A little paprika would be great!

What potatoes are best for roasting
My favorite potato to use for these Greek Lemon Potatoes is Yukon Gold. These potatoes are the perfect balance of waxy and starchy, making them soft and creamy in the middle but still crunchy on the outside.
If you can’t find Yukon Gold potatoes, you can absolutely use russet, red, or even sweet potatoes. You really can’t go wrong!
Do you peel potatoes?
You can if you want, but it’s definitely not necessary. I actually prefer to leave the peel as it helps the outside of the potato nuggets get nice and crispy!
Should you soak potatoes in water before baking them?
Soaking the potatoes is completely optional, but it does help to remove some of the excess starch, which makes the potatoes crunchier. I chose not to soak mine to save time and they were still crispy.
If you decide to soak the potato wedges, simply place them in cold water and let sit for about 30 minutes. Be sure to pat them dry before baking to remove excess moisture!

Do the potatoes need to be boiled before baking?
Do not! I’m not in this recipe, but on the other hand, if you do, you’ll have a faster bake time! Many say this is the secret to crispy potato skins, but you’ll see these turn out nice and crispy!
However, if you really want to, put the sliced potatoes in a pot of boiling water for about ten minutes. Once the outside is soft but the inside is still raw, remove, drain, toss with oil/lemon/herb mixture, and bake. They’ll do it a little faster, so keep an eye out for them!

Here are some things you can do to make sure your potatoes are crispy every time:
- Leave the skin behind. The skin gets nice and crispy in the oven. I love leaving them on!
- Make sure they are dry. You want your potatoes to dry out before roasting to make them nice and crispy!
- Don’t overcrowd the pan. Give the potato cubes room to breathe in the oven. We want the heat to reach them from all directions. If they touch, the potatoes will steam rather than roast and crisp.
- Flip them over. Flip the potatoes halfway through the baking time to get the heat to them, not just one side.
- Bake on high heat. Roast potatoes at 425ºF hot enough that the potatoes will crisp but not so hot that the outside will burn before the inside is cooked through.

Variety
- Play with seasonings. Keep it simple with salt and pepper, or season with paprika, paprika, paprika, indian seasoning, Taco Seasoningranch seasoning, Italian seasoning, you name it.
- Try other herbs. I like the combination of dried oregano and fresh parsley, but you can also use rosemary, dill, basil, whatever you like.
- Make them cheesy. Sprinkle freshly grated Parmesan over the finished potatoes for a cheesy finish. Um!

How to store
Leftover baked potatoes can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, heat in a 350ºF oven until heated through.
I do not recommend freezing these baked potatoes as the texture will become grainy when thawed.

- 3 pound Yukon Gold potatoes, sliced 1Inch pieces
- 6 garlic cloves, chopped
- 1/2 cup Freshly squeezed lemon juice (approx. 3 or 4 lemon)
- 1/3 cup olive or avocado oil
- 2 teaspoons dried oregano
- 1/3 cup fresh parsley, chopped
- 1 teaspoon fine sea salt, as you like
- Freshly ground black pepper
- Preheat oven to 425ºF and line a baking sheet with parchment paper.
- Cut potatoes into 1-inch cubes.
- In a bowl whisk olive oil, lemon juice, garlic, herbs and spices.
- Add the potatoes to the bowl and mix well
- Transfer potatoes to a lined baking sheet, making sure they are evenly spaced and the flats of the potatoes touch the baking sheet. If desired, use two baking sheets to ensure at least ½” space between them.
- Bake in the preheated oven for 30 minutes, then turn the potatoes over and bake for another 30 minutes, until crispy and fork tender.
