But when my kids (and friends… well, sometimes even myself) want the real deal, Baked Potatoes in the Oven is my first choice. They’re crispy on the outside and tender and fluffy on the inside, oh-so-simple.

Basic Baked Potatoes:

  • Potato – I used Yukon Gold potatoes, but russet, Idaho, fingerling, and baby red potatoes will work too. For a colorful presentation, you can also mix and match potato varieties. Open or close the peels to your liking (I love them!).
  • olive oil – Used to soften and help the seasoning adhere to the baked potatoes. Any neutral cooking oil will also work.
  • unsalted butter – I prefer grass-fed butter because it tastes great, but use your favorite unsalted variety.
  • seasoning – Include granulated garlic, dried oregano, salt and pepper.

Use your favorite dried herbs and spices, such as rosemary, smoked paprika, onion powder, or parsley, or use a mix of some of these:

  • bacon – You can get My Favorite Bacon Brands Are Here, or use any variety you like. Make sure it’s shredded or diced.I used raw bacon in the recipe, but if you have a batch Oven Baked Bacon Having it on hand, you can crumble it and add it to the already cooked.
  • grated parmesan cheese – Always a go-to topping for vegetables, grated Parmesan adds a cheesy flavor to oven-baked potatoes. It also adds a little crunch on the outside!
  • sun dried tomatoes – Add a little color and tangy flavor to buttery potatoes!You can use store bought, but I make it often Homemade Sun Dried Tomatoes – They are simple and taste better.

If you want to make it the best oven-baked potato recipe, follow these tried-and-true tips:

  • Cut potatoes into the same size. Doing this ensures they cook at the same rate.
  • For a crispier texture, soak first. Soak cut potatoes in cold water for at least 30 minutes, or overnight, before cooking, if time permits. This isn’t necessary, but it removes excess starch and cooks them crisper. Pat dry thoroughly before adding oil and seasonings.
  • Position the grill correctly. Center the rack in the oven for even heat distribution.

Storage Instructions

  • Shop: Place leftover crispy baked potatoes in a covered container and refrigerate for up to 5 days.
  • Meal preparation: Chop potato cubes or cubes and soak in a bowl of water in the refrigerator. This prevents browning and also helps crisp the potatoes as they cook. Drain and pat dry before roasting.
  • Reheat: In a skillet, in a 350°F oven, or in the microwave, heat and crisp baked potatoes over high heat (that way they won’t get crispy). You can also use them cold for potato salad (using the same dressing and additions as mine) Cauliflower Potato Salad).
  • freeze: You can freeze leftover baked potatoes for up to 3 months. These leftovers are safe to eat, but the texture of the potatoes may change.
