  • spices– You’ll need cinnamon, nutmeg, and cloves.
  • Salt – Avoid using coarse sea salt as it is more difficult to dissolve.

  • all purpose flour – Don't use cake flour as it won't give the cake the structure it needs to hold the caramelized pears.
  • baking powder – Please check the expiration date before adding.
  • Salt – Kosher salt is best.
  • SPLENDA® Natural Sugar and Stevia Sweetener Blend– This is a sugar substitute, but coconut sugar is a great substitute.
  • egg– They need to be at room temperature so the batter doesn't separate.
  • Original yogurt—— Make sure it has no added sugar. It can be regular yogurt or Greek yogurt.
  • Vanilla extract – It helps round out the flavor, but you can leave it out.

How to Make Pear Upside Down Cake

  • Prepare the oven. Preheat it to 350F. Generously coat a 9-inch round cake pan with cooking spray. Arrange the pear slices in the bottom of the cake pan. Set it aside.

Avoid this by attaching an oven thermometer to the oven rack where the cake is. Adjust temperature knob as needed until actual baking temperature is 350 degrees Fahrenheit.

  11. Bake the cake for 45-50 minutes or until it passes the “toothpick test”.
  12. Remove the cake from the oven and place the pan on a wire cooling rack for 5-10 minutes.
  13. Place the plate on top of the cake pan, say a little prayer, and flip the cake so that the caramelized pears sit on top.
