While I usually make savory salsa, this is my go-to when I’m craving something sweet. I’ll show you how to make the best pineapple salad with a few simple ingredients and share a delicious way to eat it (not just chips!).

- Pineapple – Buy a firm, fresh, ripe pineapple with bright green leaves and a slightly yellowish outside (though more yellow is fine), with a slightly fluffy skin when squeezed. If it smells fruity at the base of the stem, it’s fully ripe! I don’t recommend using canned pineapple because it doesn’t taste the same, but it can work in a pinch.
- tomato – Use ripe medium tomatoes. If your tomatoes have lots of seeds, you can remove them before using so the salsa isn’t too watery.
- avocado – Pineapple Avocado Salad is the best! The creamy texture pairs perfectly with other crispy ingredients and balances sweetness and heat.
- shallots – White onions will work too.
- fresh coriander – In my opinion, any salsa is a must, but feel free to omit if you’re not a fan.
- Jarrahpepper foam – Increase the heat! If you don’t want your salsa to be too spicy, remove the seeds and ribs first (wear gloves!).
- lime juice – Adds soup flavor and helps flavor development. This recipe uses 3 tablespoons, but you can use more if you prefer. Freshly squeezed juices work best here, but bottled juices are also handy.

- mix. In a large bowl, combine pineapple, tomato, onion, cilantro, avocado and jalapeño.

- Grilled Pineapple Salsa – Grill the pineapple slices on the grill first, then dice and use in recipes.
- Pineapple Tomato Salsa – Swap tomatoes for 1-2 tomatoes.
- Add other fruits and vegetables – Try strawberries, red bell peppers or cucumbers. You can also add black beans if you want something more hearty.

You can easily make this dish ahead of time! Store this salsa with pineapple recipe in the refrigerator for up to 5 days. However, only add the avocado on the day so it doesn’t brown. Stir before serving.

While you can safely freeze salsa, it will be very runny when thawed. Also, the texture of many fresh vegetables, such as tomatoes and avocados, can be ruined. Stick to enjoying freshness.
