Ingredients and Substitutes

- pork chops – Also known as blade chops, blade steaks, blade roasts, or pork shoulder steaks. Choose 1-inch thick steaks for best results, as they are less prone to overcooking.
- olive oil – For searing. Avocado oil is also a good choice.
- spices – Includes sea salt, black pepper and garlic powder. You can also add other spices such as paprika, cumin or onion powder.
- Worcestershire sauce – The acid in the sauce helps break down the protein in the pork chops, making them more tender. Plus, you get an extra layer of flavor. We only use a small amount of Worcestershire sauce, but if you don’t have it or don’t want to use coconut aminos or low sodium soy sauce would be great substitutes.
- fresh herbs – I used fresh parsley and fresh rosemary, but you can substitute other herbs such as thyme, chives, or oregano. If you don’t have fresh herbs on hand, you can substitute 2 teaspoons of dried herbs for 2 tablespoons of fresh herbs.
Variation: Swap the seasonings!

How to Cook Pork Chops in the Oven

- Prepare. Preheat oven.Heat oil in a large oven-safe skillet (preferably cast iron skillet) over medium-high heat until screaming hot.
- season. Trim off excess fat from each steak. Pat dry with paper towels. Season both sides with salt, pepper and garlic powder.

Tips for the Best Pork Chops
- Choose the largest skillet possible. i used one 12 inch frying pan Good for all 4 steaks. If it doesn’t fit, it’s best to cook in batches, or use two skillets.
- Use cast iron if you can. I highly recommend cast iron for any kind of steak, whether you’re cooking steak (like Sirloin, Roasted Tenderloinor Rib Eye) or this pork chop recipe. Cast iron heats and retains heat much better than pans made of other materials, which gives the steak a perfect sear and helps prevent the interior from overcooking.
- Let your skillet sizzle before adding the pork. Otherwise, they won’t form such a nice crust. It takes about 2-3 minutes to heat the pan. The oil should be glistening and slide around the pan easily.
- Check the internal temperature with a meat thermometer. This is the best way to ensure your steak is cooked to perfection.you can use common meat thermometerbut I like to use probe thermometer For oven recipes like this one, I don’t have to keep the oven on because it beeps when it reaches the right temperature.
- Don’t forget to rest. Letting the meat rest allows the juices inside to settle, so the end result isn’t dry.
storage instructions
- shop: Wrap the remaining pork shoulder steak tightly in plastic wrap or place in an airtight container. Store in refrigerator for up to 3-4 days.
- Reheat: Transfer steaks to a roasting pan, cover with aluminum foil to help retain moisture, and reheat in a preheated 350°F oven. You can also use the microwave, but the result will be drier.
- freeze: Place leftovers in a vacuum seal bag or airtight container and store in the refrigerator for up to 3 months. Thaw the bag in cold water or in the refrigerator overnight before reheating.
