These large caps are great with traditional pizza toppings.I’ve surpassed this Portobello Mushroom Pizza Served with sauce, cheese, and pepperoni, but I also share a lot of ideas below. These are easy to customize, or roll out the toppings and let everyone top their own.
We host a low carb pizza night at home at least once a week. It’s never boring because first of all…pizza! And, these portobello pizzas are one of my favorite mushroom recipes in tomato sauce.
What is Portobello Pizza?
This portobello pizza is essentially a mushroom crust pizza topped with pizza staples – sauce, cheese, and your favorite toppings.

ingredients you need

- olive oil spray – Use the spray to spread a thin layer of olive oil evenly on the baking sheet and mushrooms. If you don’t have it, you can drizzle or brush with olive oil instead.
- Portobello Mushrooms – Opt for larger portobello mushroom caps, which are more concave and have higher sides and are best for toppings.
- Sauce – I used marinara sauce here, but pizza sauce is also a good option.buy store bought (I am looking for a version with no added sugar like this), or make your own sugar free marinara sauce or Keto Pizza Sauce.
- mozzarella cheese – Use chopped or chop your own for convenience. Fresh mozzarella is also good, but will release more moisture.
- pepperoni – I love the classic pepperoni pizza, but you can also try some of the other toppings below.

How to Make Portobello Pizza

- Prepare. Preheat oven. Coat a baking sheet with olive oil spray. Use a spoon to scrape the gills of the mushrooms.
Tip: If you like, you can precook the mushrooms in the oven first.
Doing this helps remove excess moisture before adding the ingredients, but I often skip this step to reduce the workload. If you bake them first, drain, then add toppings and bake again. If you skip this step, know that they release a lot of water, but you can drain the excess liquid from the pot later.
- season. Place mushrooms (stem side up) on a rimmed baking sheet. Drizzle with olive oil and sprinkle with sea salt.
- gather. Top each mushroom with sauce, cheese, and pepperoni.


- bake. Place in the oven until the cheese is bubbling and the mushrooms are tender. You can top with grated Parmesan cheese at the end if you like.

- for vegetarians – You can serve vegan pizza in many ways, but the classic veggie pizza has peppers, onions, cherry tomatoes, and black olives. If you want to try something else, add garlic, spinach, artichokes, broccoli, or extra mushrooms. For watery vegetables, it is best to precook them first.

Storage Instructions
- Shop: Store leftover mushroom cap pizza in the refrigerator for 3-4 days.
- Reheat: Roast mushrooms in a 350°F oven for best results.
- freeze: Frozen mushrooms aren’t ideal, so if you think you’ll have extras, I recommend cutting the recipe in half.

Scrape the black gills off the mushrooms with a spoon and discard the gills.

Place mushrooms stem side up on a baking sheet. Spray with olive oil spray and lightly sprinkle with sea salt.

Put 1 1/2 tablespoons (21 grams) of sauce on each mushroom.Sprinkle each with 3 tablespoons (42 g) mozzarella cheese and 4 slices pepperoni or sausage.

- If you prefer, you can pre-bake the mushrooms for 15-20 minutes before adding the toppings. Drain, then add toppings and bake again. That way they become less watery.
